Kimchi Brine Salt Ratio (2–3% by Weight)

2–3% salt by the weight of the cabbage draws moisture, wilts the leaves, and creates the osmotic environment that initiates kimchi fermentation.

The initial salting step is the most critical ratio in kimchi production. Applying 2–3% salt (by weight of the raw napa cabbage) draws out cellular moisture through osmosis, softening the cabbage to a flexible, translucent state and purging bitterness. This concentrated surface salt is later rinsed away, leaving behind a cabbage that is salted to roughly 2% internally — the optimal concentration to suppress harmful bacteria while allowing Leuconostoc mesenteroides and Lactobacillus plantarum to thrive and produce lactic acid.

Method

WEIGHT-BASED: Weigh trimmed cabbage. Calculate 2% (mild, for faster fermentation) to 3% (more assertive, for longer aging). Cut cabbage into quarters lengthwise; sprinkle salt between every few layers of leaves with more concentrated at the thick white ribs, which are slower to wilt. Let rest 1–2 hours, turn cabbage, and rest another 1–2 hours (total 2–4 hours for 3 kg cabbage at room temperature). The cabbage is ready when the leaves bend without cracking and a white rib, when folded, does not snap. Rinse thoroughly under cold water 2–3 times to remove excess surface salt, then drain and gently squeeze.

Tips

  • Always weigh cabbage — volume measurements are unreliable. Kitchen scale is non-negotiable for reproducible kimchi.
  • Do not use iodized table salt: iodine is an antimicrobial that inhibits Lactobacillus and Leuconostoc bacteria essential for fermentation.
  • The thick white ribs need more salt than the leafy green parts — concentrate extra salt there.
  • Taste a rinsed piece before proceeding: it should taste pleasantly salty but not briny. Rinse again if too salty.
  • Temperature affects wilting speed: 2–4 hours at 20–22°C (room temperature) vs. 8–12 hours refrigerated for the same result.
  • After rinsing, squeeze out excess water firmly — excess moisture dilutes the paste and slows fermentation.

Variations

  • Wet brine method

    Dissolve salt in cold water (2–3% salt solution) and submerge whole or halved cabbage for 6–12 hours; more even penetration but slower and requires more space

  • Quick brine (3% + shorter rest)

    Higher salt concentration allows a 2-hour rest; rinse more thoroughly to prevent overly salty final product

  • Young kimchi / geotjeori (no fermentation)

    Salt at 1.5% for a shorter wilt (1 hour), mix with paste and serve immediately without fermentation

  • Radish kimchi (kkakdugi)

    Cubed mu (Korean radish) is salted at 2% and rested only 30–45 minutes — radish releases moisture faster than cabbage

Why 2–3%? The microbiology

Salt at 2–3% of the cabbage weight (which translates to roughly 2% NaCl in the final water activity environment) creates a selective pressure that kills most spoilage organisms while permitting salt-tolerant lactic acid bacteria — primarily Leuconostoc mesenteroides in the early phase and Lactobacillus plantarum as acidity builds — to proliferate. Below 1.5%, unwanted bacteria and mold compete; above 4%, fermentation slows dramatically or stops. This narrow window is why precision weighing is essential and why iodized salt (an antimicrobial) is excluded.

Dry vs. wet brine

Traditional Korean kimchi uses the dry-rub method: salt is packed directly between cabbage leaves, and the cabbage rests in its own expressed moisture. This concentrates flavor in the leaves more intensely and is faster. The wet brine (soaking in salt solution) is more common in commercial production and gives more even salt penetration but requires more time and more water. For home kimchi, the dry method is standard in Korean households.
