Labneh Strain Rate (Yogurt Weight to Final Yield)

Whole-milk yogurt loses roughly half its weight during overnight straining, yielding dense, spreadable labneh.

When yogurt is strained through cheesecloth or a fine-mesh bag, whey drains away and the solids concentrate into labneh. The standard yield is approximately 50% by weight: 1 kg of whole-milk yogurt produces about 500 g of labneh after 8–12 hours. Fat content, strain duration, and ambient temperature all shift this figure — higher-fat yogurt and longer straining both push the yield lower as more moisture escapes.

Method

Line a colander with a double layer of cheesecloth or a clean muslin cloth. Pour in yogurt, tie the cloth into a bundle, and suspend it over a bowl in the refrigerator. Strain for 8 hours for soft labneh, 12–24 hours for firm labneh that can be rolled into balls. Salt (1–1.5% of starting yogurt weight) may be mixed in before or after straining to draw out additional whey and season simultaneously.

Tips

  • Salt the yogurt before straining: it draws whey more aggressively and seasons the labneh evenly throughout.
  • Keep straining in the refrigerator (4°C) to prevent over-acidification, which would make the labneh sharp and grainy.
  • Save the whey — it is rich in lactose and B vitamins; use it as the liquid in flatbreads or as a tenderising marinade.
  • For perfectly uniform balls, chill strained labneh for 30 minutes before rolling, then coat in za'atar, sumac, or dried mint and submerge in good olive oil for preservation.
  • If yield seems lower than expected, check that the yogurt has no added stabilisers (pectin, gelatin, starch) — these trap water and actually inflate final weight while degrading texture.

Variations

  • Low-fat yogurt base

    Yield drops to 40–45% because less fat is present to retain structure; texture is tangier and less luxurious

  • Sheep's milk yogurt

    Higher fat and protein raise yield toward 55–60%; flavour is richer and more complex

  • Extended strain (48 hours)

    Yield falls to 30–35%; produces very firm labneh suitable for rolling in herbs and olive oil for preservation

  • Room-temperature straining

    Faster whey release, 6–8 hours suffices; only suitable in cool ambient conditions (below 20°C) to avoid souring

  • Greek yogurt as starting base

    Already partially strained; 4–6 hours produces firm labneh, yield closer to 70–75% of the starting weight

Fat content is the dominant variable

The 50% yield rule holds reliably for standard whole-milk yogurt (3.5–4% fat). As fat climbs — sheep's milk averages 6–7% — it physically occupies more of the solids matrix, raising yield. Conversely, low-fat yogurt has more free water relative to protein and fat, so more whey escapes and yield falls. Manufacturers who add milk solids or stabilisers to boost protein artificially will see anomalous yields; for predictable results, use plain, live-culture yogurt with no additives.
