Masa for Tortillas (Masa Harina to Water)

The critical hydration ratio that determines whether corn tortillas press cleanly, puff on the comal, and stay pliable after cooking.
Corn tortilla masa is nixtamalized corn flour (masa harina) hydrated with water to form a smooth, plastic dough. Unlike wheat flour doughs, masa has no significant gluten network; structure comes from swollen starch granules binding together under heat. Hydration is the most important variable: too dry and dough cracks at the press; too wet and it sticks to the plastic, tears, and fails to puff. The puff (globo) — the dramatic steam bubble that lifts the tortilla when tossed onto a hot comal — is evidence of correct hydration and proper heat, and signals a well-cooked interior.

Method
Combine masa harina and salt in a large bowl. Add warm water all at once and mix with your hands until a smooth, cohesive ball forms — about 2 minutes. The dough should feel like soft playdough: it should not crack when you press a ball flat, and it should not stick to clean dry hands. If it cracks, add warm water a tablespoon at a time; if it sticks, add masa harina a spoonful at a time. Cover with a damp cloth and rest 5–10 minutes to fully hydrate. Divide into 30 g balls. Press between two pieces of plastic (or a tortilla press lined with plastic) to 15–18 cm diameter, 1.5–2 mm thick. Cook on a very hot, dry comal or cast-iron skillet (230–260 °C) for 30 seconds per side, then flip again — the second flip triggers the puff.
Tips
- Water temperature matters: warm water (not boiling, not cold) hydrates starch granules quickly and produces a smoother, more pliable dough.
- The crack test: press a ball between your palms — if edges crack, add more water; if it squishes flat and sticks, add masa harina.
- Let the dough rest covered for at least 5 minutes after mixing; premature pressing produces rough-edged tortillas.
- The comal must be genuinely hot — a drop of water should evaporate on contact. Tepid heat produces pale, stiff, uncooked tortillas.
- The puff happens on the second flip; press the puffed tortilla gently with a cloth to help steam distribute evenly inside.
- Masa harina brands vary; Maseca requires slightly less water than Masabrosa or fresh-milled masa harina from Mexican mills.
Variations
- Blue corn tortillas
Blue masa harina (from blue maize) uses the same ratio but absorbs slightly more water; start at 0.78 hydration
- Fresh masa tortillas
Fresh stone-ground masa from the tortilleria contains its own moisture (typically 50–55% water content); no added water needed — press immediately
- Thick tortillas (for tlayudas or memelas)
Same dough, pressed thicker (4–5 mm); requires longer cooking and lower heat to cook through without burning
- Lard-enriched tortillas
1–2 tsp lard per 250 g masa added for a richer, softer result popular in northern Mexico; increases plasticity and shelf life
- Wheat-masa blend (flour tortillas del norte)

Notes
Nixtamalization and masa harina
Masa harina is not raw corn flour — it is dried and powdered masa that has already been through nixtamalization (soaking dried corn in an alkaline cal/lime solution), which breaks down the pericarp, releases niacin, and fundamentally changes the starch structure. This is why rehydrating masa harina with plain water produces workable tortilla dough, whereas raw corn flour would remain grainy and structurally useless.
The puff as quality signal
The globo (puff) occurs when residual moisture in the masa converts to steam between the two cooked layers on the second flip. It signals that the comal is at the right temperature and the hydration is correct. Tortillas that never puff are either underhydrated, cooked at too low a temperature, or pressed too thin. Tortillas that puff and immediately collapse flat are well-made; those that remain balloon-shaped have too much moisture.
