Pasta Water Salt Ratio

Target 1% salt by weight in your pasta water — roughly 10 g per litre — so the pasta seasons itself from the inside during cooking, making finishing salt nearly redundant.
The pasta water salt ratio defines the salinity of the cooking water in which dried or fresh pasta is boiled. Salt does two things: it seasons the pasta throughout by diffusing into the starch matrix as it cooks, and it slightly raises the boiling point (negligibly, ~0.17 °C per 10 g/L) — a scientifically trivial effect that nonetheless firms the pasta texture slightly through ion exchange with surface starch. A properly salted pasta water tastes noticeably saline — often described as 'pleasantly seasoned sea water' — but not overwhelmingly so. Unsalted or under-salted water produces pasta that tastes flat regardless of how aggressively the sauce is seasoned.
The proportions
- 1 litre (1,000 g)
- Water — Use at least 1 litre per 100 g of dry pasta to allow free movement and prevent starchy clumping.
- 10 g (~1.5–2 tsp kosher, ~1 tsp fine sea salt)
- Non-iodized salt (kosher or sea salt preferred) — Iodized table salt can impart a slight chemical taste at this concentration; kosher salt's larger crystal makes over-salting harder. Table salt weighs more per volume — use weight, not volume.
- 100 g reference unit
- Pasta (dry) — Not a component of the water itself, but calibrates how much water and salt to prepare.
Method
Bring a large pot of cold water to a full rolling boil before adding salt. Add salt all at once — cold water draws out more starch from the pasta if salted early, but the practical difference is minor. Add pasta to vigorously boiling salted water and stir immediately and frequently for the first 2 minutes to prevent sticking. Cook to al dente (slightly underdone), reserving at least 1 cup of the starchy salted cooking water before draining. The starchy pasta water is a key emulsifier for bringing sauce together.
Tips
- Weigh your salt — volume measurements vary wildly between salt brands and crystal sizes. A kitchen scale eliminates guesswork.
- Add salt only after the water boils (or just before adding pasta). Salt added to cold water does not measurably speed boiling and can cause trace pitting in thin stainless pots over time.
- The reserved pasta water is starchy, saline, and hot — it is the professional cook's secret weapon for loosening thick sauces, emulsifying butter or olive oil, and adjusting final seasoning without diluting flavour.
- Taste the water before adding pasta. It should taste like a seasoned broth, not brine or plain water. This is the simplest calibration tool.
- Do not rinse cooked pasta. Rinsing strips the starchy surface that allows sauce to adhere and washes away the salt absorbed during cooking.
Variations
- Light brine (0.5%)
5 g per litre; appropriate when the finished dish is very salty (e.g. anchovies + guanciale in carbonara); pasta absorbs less salt, giving more room for the sauce to season.
- Heavy brine (1.5–2%)
15–20 g per litre; used in some Italian regional traditions; very assertive seasoning, especially suits thick pasta (rigatoni, paccheri) that has more surface area and takes longer to season through.
- Blanching water for Asian noodles
Ramen noodles and soba are often cooked in unsalted or very lightly salted (0.2%) water since the tare/soup provides all seasoning; udon follows the same logic.
- Gnocchi and fresh pasta water
Fresh pasta cooks in seconds and absorbs salt rapidly — some cooks reduce to 0.7% to prevent overseasoning; dried pasta's 8–12 minute cook time demands the full 1%.

The 'sea water' myth
A widely repeated Italian adage says pasta water should taste 'like the sea.' Average sea water is approximately 3.5% salinity — more than three times the 1% target and genuinely unpleasant to drink. The instruction is better understood as a cultural shorthand for 'season it assertively' rather than a literal prescription. At 1%, the water tastes pleasantly saline; at 3.5%, it tastes medicinal. The 1% standard is where seasoning and palatability meet.
Why starchy pasta water works in sauces
During boiling, surface starch leaches from the pasta into the water, producing a dilute starch suspension. When this liquid is added to a pan with fat (olive oil, butter, or guanciale fat), heat causes the starch to thicken slightly and the starch molecules act as emulsifiers — stabilizing the fat-water interface so the sauce coats the pasta as a creamy, cohesive film rather than separating into greasy and watery phases. This mechanism is central to cacio e pepe and carbonara, both of which use no cream.
