Pâté en Croûte Pastry-to-Filling Ratio

The structural balance between hot water crust and forcemeat filling that prevents collapse, soggy walls, or gaping voids.
Pâté en croûte is a forcemeat-filled pastry case baked in a hinged mould and served cold in slices. The ratio of pastry shell thickness to filling volume determines whether the finished terrine slices cleanly, the crust remains dry and crisp, and the structure holds under the weight of a jelly-filled aspic topping. Too much crust and each slice is overwhelmingly doughy; too little and the walls buckle, crack, or absorb moisture from the filling. The conventional target is a crust that constitutes roughly 30–35% of finished weight, with walls and lid 6–8 mm thick.

Method
Make hot water crust: boil water and lard together (1:2 water-to-lard by weight), pour over flour, knead warm until smooth. Line chilled mould while pastry is still pliable — cold pastry cracks. Pack filling firmly in layers, pressing out air pockets. Seal with pastry lid, crimp, and cut 1–2 chimney holes for steam. Bake at 200 °C for 20 minutes to set structure, then reduce to 160–170 °C until internal temperature of filling reaches 68–70 °C (155–160 °F). Rest completely overnight. Fill gaps through chimneys with warm, nearly-set aspic. Refrigerate until aspic is firm before unmoulding.
Tips
- Fill the mould firmly and without air pockets — trapped air creates unsightly voids when sliced.
- Chill the filling to near-freezing before packing; warm forcemeat melts pastry butter prematurely and weakens walls.
- Do not attempt to demould until fully cold (ideally 12 hours) — hot or warm pâté en croûte will collapse under its own weight.
- Use a thermometer: underbaked forcemeat (below 68 °C core) is a food safety risk; overbaked pastry dries out irreparably.
- Aspic must be poured in stages — allow each addition to set slightly before adding the next to prevent overflow.
Variations
- Game pâté en croûte
Higher filling-to-crust ratio tolerated (up to 2.5:1) because lean game forcemeat shrinks more; more aspic needed
- Fish pâté en croûte
Thinner walls (5 mm) and lower oven temperature (150 °C) to prevent overcooking delicate fish mousse
- Individual portions (petits pâtés)
Crust proportion rises to near 40% as smaller formats have a higher surface-area-to-volume ratio
- Pâté de Pâques (Easter pie)
Contains whole hard-boiled eggs in the filling centre; packing density adjusted to accommodate void

Notes
The shrinkage gap problem
Forcemeat contracts as it cooks and cools, pulling away from the crust and leaving a visible void in the finished slice. Aspic jelly — poured hot through chimney holes and allowed to set — fills this gap, bonds crust to filling, and provides the clean, glossy cross-section prized in competition pâtés. Without aspic, even a structurally perfect pâté looks amateurish in cross-section.
Hot water crust vs. short crust
Classic pâté en croûte uses hot water crust — lard and boiling water worked into flour — because it remains plastic and mouldable while warm, sets rigid when cold, and withstands the pressure of dense fillings without cracking. Short crust (butter-based) is too fragile for tall, free-standing formats, though it appears in some regional flat-pie variants.
