Equal weights of egg, sugar, flour, and butter — the original self-scaling cake ratio that produces a dense, golden, perfectly structured loaf without a drop of leavener.

The pound cake ratio is one of the most elegant formulas in baking: equal parts by weight of egg, sugar, flour, and butter. The name derives from the original recipe calling for one pound of each. The French call it quatre-quarts (four quarters) for the same reason. Because eggs supply both protein (structure) and fat (from the yolk), combined with butter fat and flour starch, the formula achieves balance without any chemical leavener. The sole source of lift is air beaten into the creamed butter-sugar mixture and the water vapor released from eggs during baking.

Method

Cream butter and sugar together vigorously until very pale, fluffy, and nearly white — this takes 5–8 minutes and is the critical aeration step. Add eggs one at a time, beating well between each to maintain the emulsion. Sift flour over the batter in two or three additions, folding gently to avoid deflating the air. Bake in a greased loaf or bundt pan at 325 °F (165 °C) until a skewer comes out clean, about 55–70 minutes for a 800 g loaf.

Tips

  • Butter temperature is the single biggest variable: too cold and it won't cream; too warm and the fat separates instead of trapping air. Aim for 68–72 °F (20–22 °C).
  • If the batter curdles when eggs are added (the emulsion breaks), the eggs are too cold. Warm the bowl briefly over hot water and beat vigorously to bring it back.
  • Weigh the eggs in their shells then subtract 12–14% for an accurate net egg weight — or crack and weigh the eggs directly.
  • A clean crack down the center of a pound cake loaf is traditional and desirable — score the top with a thin line of butter before baking to control it.
  • Pound cake improves after one day, when moisture redistributes and the crumb sets fully; wrap tightly once cooled.
  • The ratio scales infinitely — make a 50 g batch or a 500 g batch, it behaves identically.

  • Lemon Pound Cake

    Add zest of 2 lemons and 2 tbsp lemon juice; finish with lemon glaze (powdered sugar + lemon juice)

  • Marble Cake

    Divide batter; stir cocoa paste (cocoa + melted butter) into half; swirl together in the pan

  • Almond Quatre-Quarts

    Replace 20–25% of flour with ground almonds for a moister, nuttier crumb

  • Brown Butter Variation

    Brown the butter (beurre noisette) before using; allow to re-solidify; adds nutty, caramel depth without changing the ratio

Why no leavener is needed

Chemical leaveners (baking powder, baking soda) introduce lift by producing carbon dioxide gas. In the pound cake ratio, lift comes entirely from two physical sources: the millions of tiny air bubbles beaten into the butter-sugar mixture during creaming, and the expansion of water vapor from the eggs as it turns to steam in the oven. The gluten network provided by flour and the protein network from eggs set around these bubbles. Because no leavening gas escapes quickly, the crumb is dense and fine-grained — which is exactly the texture pound cake is valued for.

The self-scaling principle

The genius of the quatre-quarts ratio is that the eggs determine everything else. A baker in Brittany with four eggs of unknown size simply weighs them, then measures out the same weight each of sugar, flour, and butter. No conversions, no adjustments — the formula is inherently proportional. This makes it one of the most practical ratios in all of baking: it works in any kitchen, at any scale, without a fixed recipe.
