Velveting Marinade Ratio (Egg White to Cornstarch to Shaoxing to Salt)

Classic Chinese stir-fry pre-treatment in a 1:1:0.5:0.25 ratio of egg white to cornstarch to Shaoxing wine to salt, forming a silky protective coating that keeps protein tender under wok heat.
Velveting (過油 guò yóu or 水滑 shuǐ huá) is the Chinese technique of pre-treating thinly sliced protein with a marinade of egg white, cornstarch, Shaoxing rice wine, and salt before blanching in oil or water and finishing in the wok. The egg white proteins and cornstarch form a gelatinous film around each piece of meat during the initial blanching step, which then sets into a protective barrier. This barrier slows moisture loss during high-heat stir-frying, yielding the characteristically silky, tender texture that distinguishes restaurant-quality Chinese stir-fries from home cooks' results. Baking soda velveting is an alternate method (used on less tender cuts) that denatures surface proteins directly rather than sealing them.

Method
Slice protein (chicken breast, beef, pork, shrimp) thinly and uniformly — 3–5 mm thick strips, cut against the grain for meat. Beat egg white lightly with a fork until just loosened but not foamy (foam creates uneven coating). Combine egg white, cornstarch, Shaoxing wine, and salt; stir until smooth. Add sliced protein and toss to coat evenly. Marinate 20–30 minutes at room temperature, or up to 2 hours refrigerated. To velvet: heat oil to 90–110°C (roughly 190–230°F) in a wok — far below smoking point. Add protein in a single layer and gently separate pieces. Blanch for 30–60 seconds until just barely opaque; drain. Alternatively, blanch in barely simmering salted water for the same time (the water-velveting method, 水滑). Proceed immediately to stir-fry in a smoking-hot wok — the pre-cooked protein finishes in under 60 seconds.
Tips
- Oil velveting requires precise temperature control — too hot (above 130°C) and the cornstarch coating fries before the protein sets; too cool and the coating slips off. Use a thermometer.
- Water velveting (the home-friendly method) is nearly identical in result and eliminates the challenge of managing large quantities of oil; use barely simmering, well-salted water.
- Do not rinse the protein after velveting — the thin gel layer is what you worked to build; patting briefly to remove excess oil (if oil-velveted) is sufficient.
- Beat the egg white just until fluid, not until foamy — air bubbles in the coating will burst during high heat and leave pockmarks.
- The same technique applies to tofu: press firm tofu, cut into strips, dip in a cornstarch-and-egg-white slurry, and water-blanch before stir-frying.
Variations
- Baking soda velveting
For tougher cuts (flank steak, pork shoulder): replace egg white with 0.5 tsp baking soda per 250 g meat, mixed into water with cornstarch; rest 15 minutes only — longer causes mushy texture; rinse well before cooking
- Cornstarch-only velveting
Egg white omitted; use 1.5 parts cornstarch to 0.5 parts Shaoxing and a few drops of water; produces a slightly crispier exterior, used for some Cantonese deep-fried preparations
- Soy sauce velveting
Add 0.5 parts light soy sauce; colors the protein more deeply, commonly used for beef with broccoli or oyster sauce dishes
- Seafood velveting
Shrimp and scallops require a lighter touch — reduce egg white to 0.5 parts and cornstarch to 0.5 parts; add a pinch of white pepper; blanch in water (not oil) only 20 seconds

The science of the silky texture
The velveting effect is mechanistic: egg white albumins denature and cross-link with cornstarch granules during the initial low-heat blanch, forming a gelatinous film that encases each protein slice. This film has two critical properties — it is hydrophilic (trapping internal moisture) and it insulates the underlying muscle fibers from direct contact with wok heat during the final stir-fry. The result is protein that reads as succulent and tender even after the aggressive 250–300°C (480–570°F) surface temperatures common in professional wok cooking. Without velveting, the same thinly sliced chicken breast becomes rubbery and desiccated in under 90 seconds at wok heat.
Restaurant technique versus home adaptation
Chinese restaurant kitchens invariably velvet in oil — it is faster (30 seconds versus 60 seconds in water) and gives a marginally silkier coating. Home cooks almost universally prefer water velveting, which requires no large quantity of heated oil, produces nearly identical results, and generates no disposal challenge. For dishes that finish in a dark, highly seasoned sauce (oyster sauce, black bean, doubanjiang), the textural difference between oil- and water-velveted protein is imperceptible once coated.
