Babà Mold
A small fluted or cylindrical mold for baking rum-soaked babà cakes.
A babà mold is a small individual baking form, often a tapered cup or mini bundt shape, used for the yeasted rum-soaked cake of Naples and France. The light dough rises and bakes inside the mold to a tall mushroom or fluted shape, then is steeped in rum or syrup after unmolding. The shape gives the cake its signature silhouette and lots of surface for absorbing syrup.
A babà mold is the distinctive vessel for the Neapolitan rum-soaked sponge cake known as babà al rum. Unlike most baking pans, it features a fixed central post or cylinder rising from a closed bottom, which is what gives the finished cake its characteristic shape: a slightly tapered, often fluted cylinder with a small dome on top and a hollow core running partway through. That hollow is not decorative — it is a reservoir that traps the rum syrup poured over the warm cake, allowing the rich, buttery, yeasted dough to absorb its full measure of sweet liqueur without leaking.
The mold is closely associated with Naples and the former Kingdom of the Two Sicilies, where it evolved alongside the cake itself, descending from the Polish-Lithuanian baba brought to southern Italy in the 18th and 19th centuries. Traditional molds are tinned copper, prized for the rapid, even heat that browns the dense, butter-laden dough; modern versions run the gamut from anodized aluminum and non-stick steel to food-grade silicone. Sizes range from individual 80–120 ml molds to a single family-sized mold of 20–24 cm that serves six to ten.
A common point of confusion: a babà mold is not the same as a savarin mold. A savarin pan is a true ring — a torus with the hole going all the way through — while a babà mold has a closed bottom and a stub of a post, so the cake has a sealed base and a small rounded cap. The difference matters for soaking: a babà holds its syrup inside, whereas a savarin releases it.

Babà Mold vs. Savarin Mold
These two pans are routinely conflated, but they produce different cakes and behave very differently under syrup. A savarin pan is a true ring — a torus with an open center that goes all the way through — and the finished cake releases any syrup poured over it. A babà mold has a closed bottom and only a short central post, so the cake has a small domed top and a sealed base; when you soak a warm babà, the syrup pools around the post inside the cavity and is held there as the crumb slowly absorbs it. Using the right mold for the right cake makes a real difference in the finished dessert: a savarin soaked in syrup on a plate will sit in a puddle; a babà soaks itself from within.
Greasing, Filling, and Unmolding
Babà dough is unusually rich and sticky, so preparation of the mold matters more than with most yeasted cakes. The general sequence below is what pastry kitchens in Naples follow for a clean release and a well-set crust.
- Brush softened (not melted) butter into every groove and around the central post with a pastry brush; melted butter pools at the base and leaves dry patches higher up.
- Dust with flour or fine semolina, tapping out the excess. Semolina gives a slightly coarser, more rustic crust with extra crunch.
- Fill the mold one-third to one-half full. The dough is highly hydrated and will roughly double, climbing up the post.
- Proof the filled mold until the dough just crests the rim, then bake at 180–190 °C / 350–375 °F for 15–20 minutes for individual molds.
- Test with a long thin skewer or a babà pricker — the dense center should read 92–94 °C / 198–201 °F to be fully baked through.
- Cool upright in the mold for 2–3 minutes only, then invert onto a rack set over a tray to catch any syrup. Too soon and the crumb collapses; too late and the sugar crust welds the cake to the metal.

Tips & pitfalls
- Butter the mold lavishly with softened butter and dust with flour or fine semolina — the rich, sticky dough will tear on unmolding if even a small patch is bare.
- Fill the mold only one-third to one-half full; the highly hydrated dough doubles as it proofs and rises up around the central post.
- Use a long thin skewer or a babà pricker to test doneness; the dense center should read 92–94 °C / 198–201 °F to be fully baked through.
- Soak the babà while it is still warm, not cold, and add the syrup in two or three additions rather than all at once so the crumb absorbs evenly without tearing.
- Preheat the empty mold on the baking sheet in the oven for a few minutes before filling; the head start helps the crust set before the center fully rises.
- If you bake in copper, never run it through a dishwasher — hand-wash, dry immediately, and have it re-tinned when the interior wears through to bare metal.
- Cool the babà upright in the mold for only 2–3 minutes before unmolding; too soon collapses the crumb, too long and the sugar crust welds it to the pan.
- Silicone molds are convenient but bake paler and softer; brush the finished cake with a little melted butter and return it briefly to a hot oven for a proper crust.
