Baking Steel
A thick steel plate that stores intense heat for crisp pizza crusts and bread bottoms.
A baking steel is a heavy slab of solid steel preheated in the oven and used as the cooking surface for pizza and bread. Steel conducts and retains far more heat than a stone, so it transfers a fast, fierce blast to the dough for a charred, crisp base and strong oven spring. It also doubles as a flat-top griddle and won't crack from thermal shock the way a stone can.
A baking steel is a thick plate of cold-rolled steel — most commonly A36 carbon, usually a quarter-inch thick — that lives on an oven rack and behaves like a heat reservoir with the responsiveness of cast iron. Its two physical properties are what make the difference in a home kitchen: it conducts heat roughly fifteen times faster than a cordierite baking stone, and it is about three times denser, so a plate of the same footprint holds far more total thermal energy. The practical result is that the moment dough touches steel, a wall of stored heat rushes into the base, setting the crust almost before the dough has time to soak, sag, or steam itself into gumminess.
That combination — high conductivity and high capacity — is what a brick deck does in a pizzeria, and it is what a baking steel brings to a 500–550 °F home oven. Neapolitan and New York-style pizzas that need 90 seconds in a commercial oven will bake in four to seven minutes on a properly preheated plate, with the open, leopard-spotted cornicione and a base that snaps rather than bends. The same mass that makes it brilliant for pizza also gives hearth breads, flatbreads, and laminated pastries a faster, more even bottom heat than any thin metal sheet pan can deliver.
Unlike a baking stone, steel will not crack from thermal stress, can be lifted and stored without ceremony, and tolerates the occasional drop that would chip ceramic. Its care follows the same logic as cast iron: keep it dry, oil it lightly, and never wash it with soap once it has built a patina. For most home cooks chasing pizzeria-style results from a standard oven, a baking steel is one of the most impactful upgrades they can make.

How Steel Beats Stone (and Sheet Pans)
The case for steel rests on a small bundle of physics that any cook can feel in the finished crust. Thermal conductivity is the rate at which heat moves through a material; thermal capacity (mass × specific heat) is how much total heat the object can hold. Cordierite baking stones have modest conductivity but lower density, so they take a long time to charge and release heat gently. Thin aluminum or steel sheet pans have high conductivity but almost no capacity, so they spike and crash. A baking steel pairs high conductivity with high density, so it dumps heat into dough the instant it lands and keeps doing it for several pizzas in a row. The corollaries — preheat long, allow re-equilibration between bakes, and expect a more aggressive bake than stone — explain nearly every tip that follows.
Seasoning and First Use
Steel arrives either lightly factory-oiled or with a bare mill finish. Either way, the first sessions are about building a dark, protective patina that will repel moisture and release food cleanly. Treat it as you would a new cast-iron skillet.
- Rinse under warm water and dry thoroughly to remove any factory oil or mill dust.
- Rub a whisper-thin coat of grapeseed, vegetable, or flaxseed oil over every surface — paper-towel thin, no pooling.
- Place upside-down or on a rack in a 400 °F oven for one hour; let cool in the oven.
- Repeat the oil-and-bake cycle two or three times before cooking anything wet or acidic on it.
- The plate will darken unevenly with use; this patina is normal, protective, and desirable.
Care and Rust Management
Steel rusts when it sits wet; seasoning prevents it, but a missed dry or a humid storage spot can leave orange spots. They are cosmetic and easy to fix.
- For light rust, scrub with fine steel wool or coarse kosher salt and a little oil until bright metal returns, then re-season in the oven.
- For heavier rust, several passes with steel wool and an extra seasoning cycle are usually enough.
- Never soak, never run through the dishwasher, and avoid dish soap once the patina is established — it strips oil and invites flash rust.
- After any contact with water, dry on the stovetop or in a warm oven and rub with a thin film of oil before storing.

Tips & pitfalls
- Preheat a full 45–60 minutes at the oven's maximum temperature; a 30-minute preheat is the practical floor, and shortcuts produce a gummy crust — this is the single most common mistake.
- Slide dough onto the steel with a wooden or metal peel dusted with semolina, or build the pizza on parchment and transfer the parchment together to avoid a stuck, deflated pie.
- Position the steel on the lower-middle rack for most bakes; some cooks run it on the lowest rack with the broiler on for the last minute to mimic a Neapolitan dome — be alert to smoke and fat fires.
- Clean with a damp cloth, paper towel, or bench scraper only; do not submerge, do not use soap once seasoned, and dry the plate immediately.
- Expect the surface to darken and discolor with use — the patina is protective, not a flaw, and should not be scrubbed off.
- Avoid thermal shock: never put a cold or wet steel into a hot oven, and never run cold water over a hot plate, or it may warp.
- Allow 5–10 minutes of re-equilibration between consecutive pizzas — a steel plate loses usable top heat faster than a thick stone, and under-recharged steel gives a soft base.
- Wear long-cuff oven mitts when transferring; the steel's mass and retained heat can scorch forearms during a peel transfer.
