Cannolo Frying Tube (Cannelli)

A metal tube you wrap dough around to fry the crisp shells for cannoli.

A cannolo tube, or cannello, is a stainless or tin cylinder around which Sicilian cooks wrap a square of dough before deep-frying it into the classic cannoli shell. The tube holds the shape and lets the shell crisp evenly, then slides out once cooled so it can be filled with sweet ricotta. Sets usually come in multiples so several shells fry at once.

The cannolo tube — called a cannello (plural cannelli) in Italian — is the slender metal cylinder around which a disc of dough is wrapped, sealed, and deep-fried to produce the crisp shell of a Sicilian cannolo. It is less a mold than a temporary armature: the dough cooks onto the metal, the metal gives the shell its shape while it crisps, and then the shell is slipped off within seconds of leaving the oil. Without it, the thin dough has nothing to hold its tubular form against the buoyancy of the fryer, and the characteristic crunchy tube simply cannot be made.

Modern tubes are almost always stainless steel, drawn seamless so the dough cannot catch on a welded seam, and sold in sets of mixed diameters. Diameter is the dimension that matters most: the Palermo standard sits at roughly 1 inch (2.5 cm) across, while the smaller cannolini tubes (about ½ inch / 1.25 cm) are reserved for bite-size shells served at weddings and buffets. Length is fairly standardized at 4–5 inches (10–13 cm), long enough to grip safely with tongs, short enough to fry in a modest saucepan of oil.

Beyond the metal itself, the cannello governs two practical decisions every cook must make: oil temperature (170–180 °C / 340–360 °F is the working window) and timing of release (slip the shell off while still blistering hot, or it will lock onto the form and resist removal). Get both right and the tool disappears into the process, doing exactly what it was designed to do — turn a flat disc of dough into the crisp, ridged (or smooth), golden tube that defines the pastry.

Types & varieties

Smooth tubes

Plain cylindrical surface; produces a smooth-walled shell and is traditional in many Sicilian home kitchens.

Tapered tubes

Wrapping and sealing the dough

The geometry of the shell is set in this step, and small choices here have outsized effects on the finished cannolo.

  • Roll the dough thin — about 1/16 in (1.5 mm). Thicker dough puffs away from the metal as it fries and traps a raw pocket against the tube.
  • Cut the dough into ovals roughly 4–5 in across; a perfect circle wastes dough at the ends.
  • Wrap on a bias (a slight diagonal) so the edges overlap along the length of the tube; this gives the shell its characteristic spiral seam.
  • Seal the overlap with a finger dipped in beaten egg white — water alone often lets the seam open in the oil.
  • Press the dough firmly against the metal so it does not spin or slide during frying, which would leak filling later.

Frying and releasing the shell

Once the tubes hit the oil, the clock is running. The shell must cook, blister, and be slipped off the form before it cools and locks on.

  • Bring tubes to room temperature before wrapping — cold metal makes the dough contract and split at the seam on contact with hot oil.
  • Fry only 2–3 tubes at a time so the oil temperature does not drop; a falling thermometer means greasy shells.
  • Cook until the dough is deep golden and bubbling has slowed, usually 1–2 minutes per side depending on oil temperature.
  • Slip the shells off the tubes within 10–15 seconds of leaving the oil while still very hot — they release cleanly and stay crisp.
  • For a stronger ridge definition on fluted tubes, chill the wrapped tubes for 10–15 minutes before frying so the dough holds its shape on entering the oil.

  • Bring tubes to room temperature before wrapping — cold metal makes the dough contract and split at the seam.

  • Seal the seam with a finger dipped in beaten egg white, not water, which often fails in hot oil.
  • Fry in oil at 170–180 °C / 340–360 °F; too cool and the shells soak up oil, too hot and the outside browns before the dough cooks through.
  • Slip the shells off the tubes within 10–15 seconds of leaving the oil while still very hot — they release cleanly and stay crisp.
  • Never plunge a wet tube into hot oil; use tongs or a folded kitchen towel to handle the hot forms.
  • Dry stainless tubes immediately after washing; simmer carbonized dough off in a pot of water with a splash of vinegar.
  • Do not fill shells until just before serving — the crisp shell softens within 20–30 minutes of contact with ricotta cream.
