A chocolate spray gun is an airbrush or HVLP-style sprayer that atomizes warm, thinned chocolate or cocoa butter into a fine mist for coating desserts. Pastry chefs spray chilled cakes and bonbons to create a soft velvet texture or apply colored cocoa-butter finishes. Keeping the chocolate warm and the gun heated prevents clogging and gives an even, professional coat.

A chocolate spray gun is a heated airbrush purpose-built to atomize cocoa-butter-thinned chocolate into a fine, even mist. Where a conventional airbrush pushes water- or alcohol-based food color through a nozzle, this tool keeps its fluid path warm — typically 35–45 °C — so that molten cocoa butter flows freely, then flash-sets the instant it hits a cold surface. That flash-setting is the whole point: when the mist lands on a frozen or well-chilled cake, shell, or sugar piece, the cocoa butter solidifies into a dry, almost powdery skin that looks and feels like velvet. Sprayed onto something warm, by contrast, the same mix melts back into a glossy film, which is useful for a different finish.

The tool matters to pastry chefs because it solves problems no other technique handles well. A mirror glaze looks spectacular but is unforgiving of fingerprints and dust; a quick pass of cocoa-butter velvet disguises minor blemishes and gives an entirely different aesthetic. Inside a polycarbonate mold, a thin colored spray becomes a marbled or two-tone shell that is impossible to achieve by pouring. The catch is that the gun is fussy: it only works with cocoa-butter-based fluids, it clogs if the mix cools in the nozzle, and cleaning is non-negotiable. Treated as a finishing tool rather than a coating tool, however, it earns its place in any serious pastry kitchen.

In practice the gun looks and behaves much like a paint spray gun, with a heated reservoir or siphon feed, a trigger or button, and a small air inlet that takes either a CO₂ cartridge, a hand pump, or a quiet electric compressor. Pressure sits around 1.5–3 bar and the nozzle is tiny — usually 0.3–0.5 mm — so a light, sweeping motion at 20–30 cm from the target is what produces an even coat. Anything closer and the mist becomes a wet drip; anything farther and the coat turns dusty and uneven.

The science of the velvet

The signature velvet finish is a piece of food physics worth understanding, because once you see why it works you can predict when it will fail. Cocoa butter has a relatively high melting point for a fat — around 32–34 °C for Form V, the crystal form you want for snap and shine. Atomize warm cocoa butter into a fine mist and each droplet arrives at the surface already losing heat to the air. Land that mist on a frozen or deeply chilled surface (-18 °C is ideal) and the droplets solidify before they can flow together, so you get a stack of micro-crystals rather than a continuous film. The eye reads those micro-crystals as a soft, matte, almost suede-like surface. Warm the surface above about 10 °C and the same droplets have time to merge into a glossy coat; still useful, but no longer velvet.

Choosing and mixing the chocolate

Plain couverture, no matter how dark, will not spray cleanly. It is formulated to set firmly at body temperature and is too viscous once melted to atomize into a fine mist — it spits, streaks, and clogs within minutes. The fix is to thin it with cocoa butter until the mix flows like warm cream. Practical ratios:

  • Dark couverture: 70 % melted chocolate to 30 % cocoa butter is a common starting point.
  • Milk or white chocolate: lean toward 50/50, because the higher sugar and milk-fat content makes the mix viscous and prone to seizing.
  • For pure color sprays (no chocolate body), use 100 % cocoa butter with powdered or oil-based food color.
  • Always melt and temper the base chocolate first, then stir in warm cocoa butter; do not add cold cocoa butter to warm chocolate or it will shock and seize.
  • Pre-mixed cocoa-butter colors from suppliers such as Chef Rubber are convenient and reliably fluid — shake or stir well before loading.

Working on a frozen cake

The classic target for a velvet spray is a frozen mousse or entremet straight from the blast chiller. Spray too early and the surface is still wet from condensation; spray too late and the cake has warmed enough to melt the velvet back into gloss. Aim for a surface temperature around -15 to -18 °C, work quickly in a cool environment, and bring the cake out of the freezer only when you are ready to spray.

Tips & pitfalls

  • Never load the gun with untempered couverture straight from the bowl — it seizes and clogs within seconds. Always thin with at least 30 % cocoa butter, and temper the mix so the finish sets hard and snaps cleanly rather than staying sticky.
  • Spray onto a cold or frozen surface (around -18 °C) for a true velvet; a warm surface gives a glossy coat instead, which is fine if that is what you want, but it is a different effect.
  • Keep the gun moving in smooth, sweeping passes at 20–30 cm. Holding too close causes drips and wet patches; too far gives a dusty, uneven coat that looks like overspray.
  • Preheat the gun for 5–10 minutes before loading chocolate. Pouring cold mix into a cold nozzle causes temperature shock — the chocolate thickens mid-spray and the gun spits.
  • Clean the gun immediately after use. Cocoa butter solidifies fast and once set inside the nozzle it is genuinely difficult to remove. Flush with hot cocoa butter, then 95 % food-grade ethanol; never soak the electrical parts.
  • Avoid water-based or alcohol-based food colorings unless the manufacturer confirms cocoa-butter compatibility. Water curdles the fat and the mix breaks; alcohol can seize it.
  • If the spray spits or splatters, stop. The mix is too cool or the nozzle is partially blocked — reheat the gun, flush, and try again rather than pushing through and ruining the cake.
  • Test on parchment before committing to a finished cake. A ten-second test pass tells you whether the pressure, distance, and flow rate are right and saves a ruined centerpiece.
