Enameled Cast Iron Skillet

Cast iron coated in a glassy enamel that needs no seasoning and won't react with acids, so you can simmer tomato or wine sauces and deglaze without harming a finish.

An enameled cast iron skillet is a heavy cast-iron pan whose cooking surface has been sealed beneath a layer of porcelain enamel — a vitreous, glass-based coating fused to the iron at roughly 760–820 °C (1400–1500 °F). The result is a pan that behaves like bare cast iron in the ways that matter most (slow, even heating; enormous heat retention; oven-to-stove versatility) but trades the seasoning ritual and metallic reactivity of naked iron for a glassy, non-reactive finish. There is no patina to build and no flavor stripped by long simmers of tomato, wine, or vinegar, which is exactly why the category, popularized by Le Creuset in northern France in 1925, has become a staple of braises and pan sauces.

In practice the skillet cooks the way a heavy pan should: it warms slowly, holds its temperature when cold food hits it, and browns with a deep, even crust when given enough preheat on a moderate flame. Two interior finishes dominate the market and they cook a little differently. Matte-black interiors (Staub, Lodge) grip fond the way bare cast iron does and sear aggressively. The light cream interiors (Le Creuset's signature) brown a touch less uniformly at first but make it far easier to read the color of a butter or wine sauce. Either way, the iron core does the work; the enamel just keeps the surface inert and easy to clean.

For a serious cook the enameled skillet earns its weight as the best one-pan choice for a dish that starts with a sear and finishes with a sauce: chicken thighs browned and braised with tomatoes, pork chops deglazed with mustard and cream, a Spanish-style fideos, a skillet cornbread pulled from a hot oven and brought straight to the table. It is heavier and slower to respond than stainless steel, shallower than a Dutch oven, and far better at browning than nonstick — and unlike nonstick, with reasonable care it will outlast the rest of the kitchen.

How it compares at the stove

The enameled skillet sits in a deliberate middle ground between a stainless-steel skillet and a Dutch oven, and understanding that position is the key to using it well.

  • Vs. bare cast iron: same heat retention and searing power, but no seasoning to maintain, no metallic taste in acidic sauces, and a surface that is harder to damage with a scrape and easier to damage with a chip.
  • Vs. stainless steel: heavier, slower to warm, and slower to respond to flame adjustments, but a far more even, forgiving cooking surface that holds temperature when cold food lands in it.
  • Vs. nonstick: far better at browning and essentially indestructible when cared for, but heavier, slower, and not the right choice for sliding a fragile egg or fish fillet.
  • Vs. Dutch oven: shallower walls and sloped sides mean better evaporation, easier turning and plating, and faster reductions; you give up capacity for submerged braises.

Care and longevity

Enamel is hard but brittle. Most pans outlive their owners; almost all the early failures come from a small set of avoidable mistakes.

  • The single most common damage is a chipped rim from being banged against stone, steel, or another pan — store with a felt pan protector or paper towel between pieces.
  • Thermal shock cracks the enamel faster than almost anything else: never preheat an empty pan on high, and never put a hot pan under cold water. Bring it up gradually and let it cool on a trivet.
  • If bare iron is exposed by a chip, dry the spot thoroughly after washing and rub a thin film of oil on it to prevent rust — the rust is cosmetic, not structural, and does not spread under intact enamel.
  • Stuck food releases with a few minutes of simmered water and a wooden spoon; for discoloration, a paste of baking soda and water or a brief simmer with a squirt of dish soap restores the surface without abrasion.

Tips & pitfalls

  • Preheat on low-to-medium for 2–3 minutes before adding oil — never preheat an empty enameled pan on high heat, or the enamel can craze or discolor at the hot spot
  • Bring the pan up to temperature gradually, especially when going from fridge-cold food to a hot pan, to avoid thermal shock that can crack the enamel
  • Use wood, silicone, or plastic tools; metal spatulas and whisks will eventually scratch the glass surface, and the scratch marks are permanent
  • Hand wash only with warm soapy water and a soft sponge — most makers forbid the dishwasher, and the detergents and prolonged wet cycles will dull and may pit the enamel
  • For stuck-on food, simmer a finger of water in the pan for a few minutes, then scrape with a wooden spoon; for stains, use a paste of baking soda and water or a brief simmer with a spoonful of dish soap
  • Avoid dropping or banging the rim — a single chip exposes bare iron that will rust and is the main way these pans are ruined
  • Do not plunge a hot pan into cold water; let it cool on a trivet or wooden board first to prevent thermal shock
  • Cook on low-to-medium burner output — the iron conducts and holds heat so well that cranking to high wastes energy and risks scorching the coating
