Gyuto (Japanese Chef's Knife)
The Japanese chef's knife — harder, thinner steel and a flatter profile built for push-cutting
The gyuto (牛刀, literally "beef sword") emerged during Japan's Meiji era, after the official lifting of the centuries-old ban on eating meat left Japanese cooks needing a Western-style blade for the proteins newly returned to the table. What they adapted is recognizably a chef's knife in profile, but refined for the push-and-pull slicing motion that Japanese technique favors: a flatter edge curve, a more acute and pointed tip, and a noticeably lighter, thinner blade.
The defining difference from a Western chef's knife is the steel. A gyuto is typically hardened to HRC 60–63 (Western knives usually sit at 55–58), and the blade is ground to roughly 10–15° per side instead of the Western 20°. The result is an edge that holds a keener, more acute sharpness for far longer — but one that is also less forgiving. Hard, thin steel chips before it rolls, so the gyuto rewards good technique and punishes contact with bones, glass, and frozen food. Many gyutos are built as san-mai construction: a hard core steel (VG-10, SG2, Aogami #1 or #2, Shirogami #1 or #2, Ginsan) clad in softer, stain-resistant outer layers, often forged into a Damascus pattern.
For a cook trained in Western technique, the gyuto feels unfamiliar for about a week — lighter, pointier, and less rockable — and then indispensable. The flat edge invites push-cutting through vegetables and protein, the slim tip slips under silverskin and into the tight spaces between joints, and the geometry lets you produce cuts (brunoise, paper-thin onion slices, clean sashimi-style fish) that a heavier knife struggles to match. A 210 mm blade is the standard recommendation for most home kitchens; 240 mm is also common and the typical pro pick.

Sharpening and care: getting the most from a hard edge
A gyuto's high hardness is a double-edged gift. The edge lasts far longer than a Western knife's between full sharpenings, but when it does finally dull, restoring it at home means investing in whetstones rather than relying on a pull-through sharpener. The daily care routine is otherwise simpler than the knife's reputation suggests: dry the blade after washing, store it so the edge isn't rattling against other metal, and treat a reactive carbon-steel core like cast iron — wipe it, don't soak it.
- Start with a 1000-grit whetstone for routine sharpening; drop to 400-grit for chips and dings and finish on a 3000–6000-grit stone for a polished working edge
- Hone lightly with a ceramic or smooth honing rod before or during long prep sessions to realign the edge
- For carbon-steel cores (Aogami, Shirogami), a thin film of camellia oil or food-grade mineral oil after drying prevents oxidation during storage
- Expect to stone-sharpen every 2–4 months with regular home use; light honing extends intervals but does not replace the stones
- Never run a gyuto through a pull-through or electric sharpener — the pressure and angle will chip a high-HRC edge or grind away far more steel than necessary
Choosing your first gyuto
For most home cooks the choice comes down to three decisions: length, handle style, and steel. Length first — a 210 mm gyuto is the standard recommendation, long enough for a whole chicken or a sheet of cabbage, short enough to feel controlled on a small board. Move to 240 mm only if you regularly break down large proteins or have a generous prep surface. Handle next — a wa-handle gyuto is meaningfully lighter and encourages the forward pinch grip that Japanese technique is built around; a yo-handle is heavier and more familiar if you're transitioning from a Western knife.

- Test the balance point — a good gyuto balances at the bolster or just forward of it, not at the handle end
- Avoid bargain-bin "Damascus" gyutos with unknown steel and glued-on handles; reputable makers (Tojiro, MAC, Misono, Sakai Takayuki, Miyabi, Masamoto) offer better value at entry prices

Tips & pitfalls
- Use a push or slice cut — start with the heel, draw straight back, and let the food slide off the board; rocking the blade abuses the thin edge and slows it down
- Hone lightly with a ceramic rod before each session to extend time between stone sharpenings
- Hand-wash in warm water with mild soap, rinse, and dry immediately — never leave the knife soaking or run it through a dishwasher
- Wipe carbon-steel blades (Aogami/Shirogami) between tasks and oil lightly for long storage to prevent oxidation and rust spotting
- Avoid bones, frozen food, hard winter squash, and coconuts — the thin, hard edge will chip on dense or impact-prone items
- Cut on wood, soft plastic, or rubber boards; glass, stone, and bamboo boards chip the edge quickly
- Store on a magnetic strip, in a saya, in a knife block with horizontal slots, or on an in-drawer blade guard — never loose in a drawer where the edge bangs against other tools
- If you're used to rocking a Western knife, shorten your stroke and let the flat of the edge do the work; the pointy tip is sharper and more useful for detail work than it first appears
