Kouign-Amann / Muffin Mold

A straight-sided cup mold that bakes kouign-amann and muffins with crisp caramelized edges.

A kouign-amann or muffin mold is a metal or silicone cup-shaped form, often steep-sided and ringed, used to bake the buttery Breton pastry kouign-amann as well as muffins and cupcakes. The deep walls contain the laminated dough as its sugar caramelizes into a crackly crust. Individual ring molds and standard muffin tins both serve this purpose.

A kouign-amann mold — moule à kouign-amann in French — is a heavy, multi-cup baking pan with straight, vertical walls and slightly deeper, wider wells than a standard American muffin tin. The shape was designed for the laminated Breton pastry of the same name, whose layers of salted butter and sugar caramelize against hot metal to produce the signature crackly, sticky crust. In domestic kitchens the same pan is often sold as a 'straight-sided muffin pan' (moule à muffins droits) and doubles as a workhorse for any small-format bake that benefits from a tall, well-caramelized edge.

What separates it from a regular muffin tin is not only the geometry but the metal. Traditional French versions are stamped from tin, tinned steel, or copper — materials chosen for the thermal mass needed to set caramel the instant cold, butter-rich dough makes contact. Thin aluminum or silicone will bake a kouign-amann, but the crust comes out paler and softer because the surface temperature drops too quickly. The vertical walls matter just as much: they force the laminated dough to rise upward rather than spilling sideways, so the exposed rim becomes the caramelized crown.

Used well, the pan is forgiving. Preheat it empty, fill each well nearly to the rim, bake hot, then let the pastries rest a few minutes before turning them out so the caramel firms enough to release cleanly. The same pan turns out bakery-style muffins, individual brioches, financiers, and a dozen other small bakes — but the design always traces back to the Breton cake that named it.

Types & varieties

Cast iron multi-cup pan

Heaviest option; superb heat retention for deep caramelization; must be seasoned like a skillet and never put in a dishwasher.

Copper multi-cup pan

Traditional French choice, most associated with Mauviel; excellent conductivity, usually tin-lined, and priced accordingly. Matfer, de Buyer, and Gobel make the tinned-steel counterparts.

Heavy-gauge nonstick aluminum pan

The most common home-cook version (USA Pan, Chicago Metallic); easy release but lower thermal mass than iron or copper.

Individual copper rings

Standalone 7–8 cm straight-sided rings used in pastry shops for plated kouign-amann; sit on a lined sheet pan.

Silicone kouign-amann mold

Flexible and convenient, but silicone is a poor heat conductor, so the crust stays paler and softer than in metal.

Brioche-style fluted variant

Some pans double as small brioche molds; the fluting is decorative and does not change the technique.

Choosing and caring for the metal

The pan you bake in shapes the cake you take out. Match the material to the result you want and to the amount of maintenance you're willing to do.

  • Copper and tinned steel: the restaurant standard. Heat is fast and even, the caramel sets sharply, and a re-tin every few years keeps the surface food-safe. Hand-wash and dry immediately.
  • Cast iron and carbon steel: the deepest caramel and the longest service life, but they behave like a skillet. Season before first use, wipe with a thin coat of oil after each wash, and never soak or run through a dishwasher.
  • Heavy-gauge nonstick aluminum: the easy-release choice for laminated dough. Skip metal utensils and plan on replacing the pan when the coating wears, since recoating is not practical.
  • Silicone: convenient for unmolding delicate chilled desserts, but a poor choice when you want crackly caramel. Treat it as a backup, not a primary kouign-amann pan.
  • Avoid nonstick aerosol sprays on cast iron or carbon steel — they build up a tacky residue that is hard to remove. Brush a thin film of melted butter or neutral oil instead.

Tips & pitfalls

  • Preheat the empty pan in the oven for 5–10 minutes before adding dough so the butter-sugar mixture starts to caramelize on contact.
  • Fill the wells nearly to the rim — kouign-amann barely rises, so a timid portion leaves a pale, stunted cake.
  • Weight the dough so each well gets the same amount; uneven fill means some pastries burn their sugar while others stay pale.
  • Don't open the oven in the first 15 minutes or the laminated layers will deflate before the sugar has set.
  • Let the pastries rest 2–3 minutes in the pan after baking so the caramel firms enough to flip without tearing, then turn out onto a rack so the bottom doesn't steam and go soft.
  • Deglaze the pan on the stovetop with a splash of hot water to dissolve burnt sugar; never soak cast iron or it will rust.
  • When switching back to muffins, scrub and degrease thoroughly first — residual buttery sugar will smoke at muffin temperatures and flavor whatever bakes next.
