Magnetic Transfer-Sheet Mold

A magnetic transfer-sheet mold is a precision polycarbonate chocolate mold fitted with embedded magnets that clamp a printed cocoa-butter transfer sheet against each cavity. When chocolate is poured and set, the printed pattern transfers cleanly onto the surface of each bonbon. Chocolatiers use it to produce glossy, decorated pieces with sharp graphics.
A magnetic transfer-sheet mold is a polycarbonate chocolate mold with small neodymium magnets embedded in its walls or base. Before magnetic molds, chocolatiers had to cut acetate by hand and weight it down with cocoa butter, marbles, or a second tray, an approach that only really worked for flat bar cavities. The embedded magnets pull the carrier firmly into every contour of the shell, so the printed image seats into hemispheres, eggs, and complex sculptural surfaces with no hand pressure and no trapped air.
The catch is that the medium must be real, properly tempered chocolate. Cocoa-butter-based transfer sheets release their color only against a well-tempered cocoa-butter surface; compound chocolate and confectionery melts will not grip the design sharply and tend to bleed or blur the print. Once you have your temper dialed in, the rest of the workflow is essentially the same as for any polycarbonate mold, with the added reward of a crisp, photographic finish on every piece.

How the magnetic system works
Each cavity has one or more small neodymium magnets set into the polycarbonate at strategic points. A separate metal or foil-backed carrier sheet is laid on a flat surface, the printed transfer sheet is placed on top of it, and the mold is then seated over the pair. The magnets pull the carrier upward against the inside of the cavity, dragging the transfer sheet with it and clamping it flat against every contour. The chocolate is poured directly on top, sets against the printed surface, and lifts the design away when demolded.
- The magnets are arranged to pull strongest at the deepest part of each cavity, which is where transfer sheets most often wrinkle and bubble.
- Most molds use a single large carrier that services all cavities at once; a few designs use multiple smaller carriers sized to subsets of cavities.
- The carrier itself is reusable indefinitely — only the printed transfer sheet is a consumable.
Choosing and storing transfer sheets
Transfer sheets are thin acetate or PET films printed with designs made from colored cocoa butter. They are consumables: a single sheet typically lasts for as many pours as the chocolate releases cleanly, after which the print starts to look faint, scratched, or patchy and the sheet should be replaced. Store them flat, dry, and out of direct sunlight, and keep them away from heat — cocoa-butter prints soften and smudge above roughly 30 °C / 86 °F.
- Match sheet size to mold; trim slightly oversized sheets with sharp scissors so edges do not fold over magnets.
- Handle by the edges or wear thin cotton gloves — fingerprints on the printed side will ghost into the finished chocolate.
- Keep unused sheets in their original sleeve or between sheets of baking paper to stop them from sticking to each other.
Common uses
Tips & pitfalls
- Temper the chocolate properly — untempered or poorly tempered chocolate smears the design and won't release cleanly from the mold.
- Lay the transfer sheet fully flat and taut before seating the mold; any wrinkle, fold, or trapped air bubble will print into the finished chocolate.
- Tap the filled mold firmly on the bench several times to drive air bubbles up the walls and out of the design.
- Let the chocolate set at cool room temperature; rushing it into the fridge causes sugar bloom and a dull, streaky finish.
- Demold the chocolate printed-side down onto a clean, flat surface so the design is fully supported and cannot crack.
- Wash the polycarbonate shell by hand only — no abrasives, no solvents, no dishwasher, and no hot water above hand-warm.
- Keep the magnets away from credit cards, hotel key cards, and electronic devices during storage; never stack the mold directly on top of sensitive equipment.
- Replace the transfer sheet as soon as the design starts to look faint, scratched, or patchy; the mold itself will outlast dozens of sheets.
- Warm the mold very slightly (a few minutes in a warm, not hot, room) before pouring if the polycarbonate feels cold to the touch — it reduces premature setting and helps the chocolate flow into fine details.
