Silicone Mold
Flexible non-stick mold for baking, freezing, and shaping in many forms.
A silicone mold is a flexible, heat- and freezer-safe form used to shape and release foods that would stick to metal. Pastry cooks bake cakes, financiers, and entremets in them and freeze mousses, ganaches, and ice; the flexible walls pop the set item out cleanly. They handle a wide temperature range and need no greasing.
A silicone mold is a flexible, food-grade rubber form used to bake, chill, and shape everything from muffins to mousse bombs. The material's flexibility and naturally release-friendly surface let you unmold delicate shapes — fluted canelés, demi-sphere entremets, scalloped madeleines — that would otherwise stick stubbornly to metal. In a serious kitchen, silicone earns its place not by replacing metal pans, but by doing jobs that metal cannot: capturing fine detail, releasing without heavy greasing, and moving seamlessly between freezer, refrigerator, and oven.
The trade-off is heat behavior. Silicone conducts heat more slowly than aluminum or cast iron, so batters rely on Maillard browning in the mixture itself rather than the pan doing the work. Cakes baked in silicone often have paler sides and bottoms than the same recipe in a metal pan. That is fine for many applications, and even welcome in chilled or frozen preparations where no browning is wanted at all. It just means adjusting expectations — and sometimes oven temperature — when swapping silicone for metal.
The other practical point is structural support. Pure silicone molds are floppy when empty and need to be set on a sheet pan to be filled and moved. Supported pans, with a fiberglass or metal mesh core, hold their shape on their own and behave more like a traditional baking pan. Knowing the difference matters: a liquid batter in an unsupported mold is genuinely hard to carry across a kitchen.

Heat, browning, and when to reach for metal
Silicone's biggest practical quirk is that it does not sear, fry, or brown the way metal does. In an oven it heats by air convection more than by direct conduction, so the bottom and sides of a cake sit in a gentler thermal environment than they would in a metal pan. This is exactly what you want for delicate génoise, financiers, and macarons, where you prize an even crumb and a tender crust over a deep brown. It is less ideal when you want a serious crust on a quick bread or a deeply caramelized loaf.
- Lower the oven temperature by about 25°F (15°C) when adapting a metal-pan recipe; food cooks more gently and is less likely to dry out at the edges.
- For deeper browning on a finished cake, unmold and return to a metal rack or rimmed sheet for 5–10 more minutes, or move to a dark-supported silicone pan.
- Silicone is a poor choice for stovetop cooking, broilers with direct radiant contact, or any use that puts the mold against an open flame — it will scorch above its rated temperature.
- An empty silicone mold that smokes or smells hot is a sign the oven is above its rating; pull it out and recalibrate.
Choosing between supported and unsupported
The single most useful question when buying a silicone mold is whether it stands up on its own. The answer tells you almost everything about how you will use it.
- Unsupported molds are best for detailed shapes, chocolates, ice, and any batter that sets before unmolding. Always set them on a rimmed sheet pan for support and even heat.
- Supported pans are best as direct swaps for metal — muffin tins, loaf pans, tart pans, Bundts — where you want the pan to hold its shape under a heavy batter and move cleanly from counter to oven.
- Very thin unsupported molds can bow under heavy batter, leaving a slanted base; if you notice this, nest the mold inside a metal ring or a second rigid pan while baking.
- Higher-grade silicone (FDA- or LFGB-stamped) resists oil absorption and odor retention; cheaper off-brand silicone can hold onto smells from strongly flavored batters and chocolates.

Tips & pitfalls
- Set an unsupported mold on a rimmed sheet pan before filling — a floppy mold full of liquid batter is genuinely hard to carry.
- Grease lightly even though silicone is marketed as non-stick; a thin film of butter or spray helps delicate batters release cleanly and improves edge color.
- Cool baked goods 5–10 minutes before unmolding; pulling hot risks tearing the crumb, but waiting too long can leave a damp, sticky film on the surface.
- For a stubborn cake, pop the mold in the freezer for 15–20 minutes — the small contraction frees the edges cleanly.
- Never cut inside the mold with a knife; silicone cuts easily and the nick will trap fat and cause sticking from then on.
- Avoid broilers with direct contact to the heating element and never put silicone over an open flame or on a stovetop burner.
- Polish a chocolate mold with a soft cotton cloth before each use; the shine transfers to the finished chocolate and gives a professional gloss.
- Store flat or gently rolled. Sharp creases weaken silicone over time and can split the surface.
