Sauté Pan (Straight-Sided)
Tall vertical walls and a wide flat base give more searing surface and liquid capacity than a sloped pan, so you can brown then add stock for a shallow braise without overflow.
The straight-sided sauté pan is the workhorse bridge between a skillet and a saucepan. Its defining geometry — a wide, flat cooking surface paired with vertical or near-vertical walls 2 to 3 inches tall in the standard size, or 3.5 to 4.5 inches in the deep variant — gives it the searing area of a frying pan and the liquid capacity of a shallow pot. Codified in the French professional brigade of the late 19th and early 20th centuries as the plat à sauter (straight-sided, two-handled) or sauteuse (deeper, rounded variant), it was distinguished from the sautoir and rondeau by its upright sides. Those walls matter: they contain splatter during a hard sear, hold enough liquid for a shallow braise, and slow evaporation just enough to let a reduction behave predictably.
What separates it from a saucepan is the ratio of base to wall. A saucepan is tall and narrow, optimized for boiling and reducing liquids where less surface area is an asset; the straight-sided sauté pan is shallow and wide, optimized for tasks that begin on a hot flat surface and end with a small amount of simmering liquid. That shape also makes it an excellent tool for pan sauces — the flat base develops fond aggressively, and the vertical walls contain splatter while you deglaze. A saucier, by contrast, has rounded walls and a curved base designed for whisking and emulsifying sauces; the straight-sided pan is the better choice when your sauce work begins with a hard sear rather than a stirred reduction.
A single 11- or 12-inch (4–5 quart) straight-sided sauté pan covers an enormous range of work: hard-searing a chicken thigh and finishing it in stock, breading and pan-frying cutlets, reducing a quart of tomatoes faster than a tall saucepan would, braising endive or leeks, or shallow-frying a batch of fritters.

Types & varieties
Three- to seven-ply construction with stainless cooking surface and aluminum or copper core. Industry standard for serious cooks; excellent searing and fond; dishwasher-safe; oven-safe to 500–600°F.
Aluminum electrochemically hardened for durability; usually paired with nonstick or stainless interior. Heats evenly, lighter than clad, less expensive; nonstick versions shouldn't exceed roughly 400°F.
Cast iron with vitreous enamel coating. Retains heat exceptionally well for long braises; heavy; slower to heat; oven-safe to very high temperatures; pricier; enamel can chip if banged.
Most responsive heat control. Tin-lined versions must be retinned periodically; stainless-lined is lower maintenance. Reactive to acid if tin wears through.
Lighter than cast iron, develops a natural patina, heats faster than cast iron. Must be seasoned; common in French and Spanish kitchens.
Convenient for eggs, delicate fish, and easy cleanup; not ideal for hard sear or pan sauces since fond won't develop and the coating degrades under high heat.
Variant with 3.5–4.5 in walls, sitting between a sauté pan and a rondeau; ideal for shallow frying, larger braises, and dishes that start with a sear and finish with substantial liquid.
Choosing a Material
The straight-sided sauté pan is sold in nearly every cookware material, and the choice has real consequences for how it sears, how it cleans, and how long it lasts.
- Fully clad stainless steel is the best all-around choice for serious home cooks: it develops an excellent fond, tolerates the oven, goes in the dishwasher, and outlasts nearly everything else. The trade-offs are weight and price.
- Hard-anodized aluminum heats very evenly and costs less than clad stainless. A nonstick interior is convenient for eggs and fish but degrades under high heat and shouldn't go above roughly 400°F.
- Enameled cast iron is superb for long, gentle braises thanks to its heat retention, but it's heavy, slow to heat, and the enamel can chip if banged.
- Copper delivers the most responsive heat control and is favored by professionals, but tin-lined versions need periodic retinning and bare copper reacts with acidic foods.
- Carbon steel is lighter than cast iron, heats faster, and seasons into a smooth cooking surface; it's an excellent choice if you want cast-iron behavior without the weight.
- Plain nonstick-coated aluminum is the right call for eggs and delicate fish only — it cannot develop the fond you need for a pan sauce, and high heat shortens its life.
Care and Maintenance
Most sauté-pan problems — warping, staining, failed nonstick — are preventable with a few habits.
- Let a hot stainless-clad pan cool briefly before adding cold liquid; thermal shock can warp the disc.
- Bring the pan to the sink of hot soapy water rather than running cold water into a screaming-hot stainless pan.
- Restore heat tint and stuck-on residue on stainless interiors with Bar Keeper's Friend or a paste of baking soda and water.
- Don't simmer acidic sauces (tomato, wine, lemon) for long periods in tin-lined copper or bare cast iron.
- Use wooden, silicone, or flat-edged metal tools to protect the cooking surface — and never metal utensils on nonstick.
- Skip the dishwasher on seasoned carbon steel; wash promptly, dry on a warm burner, and rub a thin film of oil on the surface.
- Store with a pan protector or paper towel between nested pans to prevent scratches on stainless and nonstick interiors.

Tips & pitfalls
- Preheat the pan over medium heat for 1–2 minutes before adding oil; stainless-clad wants the fat shimmering but not smoking.
- Pat protein completely dry and season just before cooking — surface moisture is the enemy of a hard sear and produces steam instead of browning.
- Leave at least 1 inch of space around each piece when searing; overcrowding drops surface temperature and steams the food.
- Use the flat base to develop fond, then deglaze with wine, stock, or water and scrape with a wooden spoon or flat-edged spatula to capture every bit.
- Crack the lid open with a wooden spoon during reductions so steam escapes; keep it closed during braises to retain moisture.
- Match pan size to burner size — a 12 in pan on a small burner creates hot edges and a cold center.
- Use the helper handle when lifting a full or hot pan; never lift by the long handle alone once it's heavy.
- Avoid nonstick for any task where fond matters; a nonstick surface cannot give you the crust needed for a good pan sauce.
- Buy the largest pan your burners can heat evenly; a single 11- or 12-inch model replaces several specialty pieces.
