Born into a Nagano household where water quality was debated with the same reverence as terroir, Daichi spent five years apprenticing under legendary Tokyo bar craftsmen before bringing that obsessive precision westward. He treats every highball as a chemistry problem: ice density, dilution rate, spirit temperature — all calculated for the perfect mizuwari. His signature umeshu are house-made from local damson plums and aged shochu, served at a hand-carved hinoki bar that smells like a Japanese forest.
