Method
Simmer gently 8–10 minutes, stirring occasionally, until peaches soften completely and liquid reduces to a loose syrup consistency. Remove from heat and cool to room temperature. Press through a fine-mesh strainer, pressing gently to extract ~80ml strained peach syrup. Discard solids.
