Airag

Airag is a lightly effervescent, mildly alcoholic fermented mare's milk traditional to Mongolia and the Central Asian steppe, produced by sustained percussive churning of raw mare's milk inoculated with a live backslopped starter culture of lactic acid bacteria and wild yeasts.
Identity criteria
- 1Must be made from mare's (equine) milk — no other animal milk produces the correct lactose concentration, fat composition, or fermentation character that defines airag
- 2Fermentation must be driven by a co-culture of lactic acid bacteria and wild yeasts, simultaneously producing lactic acid sourness and low-level ethanol (1–3% ABV) with visible CO₂ effervescence
- 3The milk must be churned hundreds to thousands of times in a vessel — traditionally a horsehide khukhuur — to homogenize fat globules, distribute the culture, and develop carbonation
- 4The starter must be a live backslopped portion from a prior active batch; pasteurized milk or dead-culture inoculation cannot produce authentic airag
- 5The finished beverage is thin, opaque white, and actively carbonated — not viscous, not cream-like, not flat

Technique
- Backslopping (live starter inoculation)
- A portion of active airag seeds fresh mare's milk with the correct steppe microbial consortium; skipping this or substituting a commercial culture alters the yeast-LAB balance and produces a different fermented product
- Repeated percussive churning
- Hundreds to thousands of strokes in the fermentation vessel break fat globules, redistribute CO₂ through the liquid, and oxygenate the culture in controlled pulses; under-churning yields separated, flat, incorrectly textured milk rather than the homogenous effervescent beverage
- Open-vessel ambient fermentation
- Fermentation at steppe ambient temperatures (15–25 °C) in a breathable vessel allows the correct ratio of lactic souring to yeast carbonation; sealing the vessel or refrigerating during active fermentation stalls yeast, kills effervescence, and skews the product toward over-acidified flat sour milk

Thin, watery liquid — significantly thinner than dairy kefir or yogurt — with active fine carbonation bubbles throughout and a smooth, non-viscous mouthfeel that coats the palate lightly
Eaten
Airag is inseparable from Mongolian hospitality ritual: offering it to a guest with both hands or with the right hand supported at the elbow is a mark of respect, and polite refusal requires a symbolic lip-touch rather than an outright wave-off. It is consumed in large quantities during Naadam (the summer national festival) and at weddings, oboo ceremonies, and family gatherings. Outside Mongolia it appears at Kazakh and Kyrgyz ceremonial occasions under the name qymyz. It is not a restaurant or retail beverage in its authentic form — it belongs to nomadic household production and festival contexts, and its quality is inseparable from the living culture maintained across generations of a family's herd.

Common mistakes
- Substituting cow's milk for mare's milk and calling the result airag — the lactose content, fat structure, and protein composition differ fundamentally and produce a categorically different beverage
- Sealing the fermentation vessel airtight, which traps CO₂ unpredictably, can over-pressurize, and disrupts the breathing rhythm the steppe culture requires
- Under-churning — a single stir or brief shake is wholly insufficient; the minimum is hundreds of deliberate percussive strokes to properly develop homogeneity and carbonation
- Fermenting at refrigerator temperature, which stalls yeast activity and produces a flat, over-sour product with no effervescence
- Treating airag as a finished static product rather than a live one — it continues to ferment after serving and becomes measurably more alcoholic and acidic within hours if left at ambient temperature
- Confusing airag with arkhi (the distilled derivative) or with commercial 'koumiss' products made from pasteurized milk with added sugars and laboratory cultures, which lack the authentic microbial complexity
Provenance
Fermented mare's milk has been produced on the Eurasian steppe for at least 5,500 years, with archaeological evidence of equine milking and hide-vessel fermentation recovered from Botai culture sites in modern Kazakhstan (Outram et al., 2009). The practice spread with nomadic pastoralist cultures across Central Asia, and both the Mongolian term 'airag' and the Turkic family of terms 'qymyz/kumiss' refer to the same ancestral beverage inherited through distinct but historically intertwined traditions. No single nation can claim sole invention; the drink is shared heritage of steppe nomadism and is recognized as such across Mongolia, Kazakhstan, and Kyrgyzstan.
