Baked Giant Taro

Whole giant swamp taro (Cyrtosperma merkusii) slow-cooked in a traditional earth oven until its dense, starchy flesh is fully tender and the exterior is deeply caramelised.

Provenance
Babai cultivation on Kiribati atolls is among the most labour-intensive traditional food practices in the Pacific, requiring hand-dug compost pits (te bwabwa) maintained for years before harvest. Pit-roasting babai for community feasts has been a cornerstone of Gilbertese food culture and ceremony for centuries, predating European contact. Origin and ownership are not contested — the dish is specific to the Gilbertese cultural sphere and is not claimed elsewhere.
