Substitutions
Pork → Beef or chickenadmissible
Other meats work though pork is traditional
Sunflower oil → Other neutral oiladmissible
Fine substitution
Many mixed vegetables → A single vegetableinadmissible
Ghiveci is defined by its medley; a single-vegetable braise is a different dish
Common mistakes
- Adding all vegetables at once so some turn to mush while others stay raw
- Using too few vegetable types, losing the defining medley
- Underseasoning, leaving the dish flat
- Stewing too fast, which breaks the vegetables and clouds the dish
Provenance
