A mildly alcoholic, naturally effervescent fermented beverage made exclusively from raw mare's milk, produced through simultaneous lactic-acid and yeast fermentation and continuous churning — the defining daily drink and hospitality offering of nomadic Eurasian steppe cultures.

Provenance

Zooarchaeological lipid-residue analysis of Botai culture vessels (Kazakhstan, c. 3500–3000 BCE) provides the earliest physical evidence of fermented mare's milk, predating written history. The Scythians' fermented mare's milk is described by Herodotus (c. 450 BCE), and detailed accounts of kumys at the Mongol court appear in Rubrouck (1255) and Marco Polo. Production heritage is genuinely shared and continuously living across Kazakh, Kyrgyz, Mongolian, Bashkir, and Tatar cultures, none of which has exclusive claim.
