Shubat
Шұбат · A reusable, backslopped fermented-camel-milk base produced by inoculating fresh camel milk with a portion of a previously soured batch and holding it through a two-stage temperature schedule so that resident lactobacilli and yeast acidify and lightly carbonate it. It is consumed as a sour dairy beverage across Central Asia and doubles as a continuous culture that is replenished from one batch to the next.

The formula
1 part soured-camel-milk starter : 3–4 parts fresh camel milk
Two-stage temperature: ~8 h at 25 °C, then ~16 h at 20 °C. The starter portion is reserved from the previous batch to perpetuate the culture.

Method
- 1Reserve ~250–330 mL of finished shubat from the prior batch to act as starter.Backslopping perpetuates an adapted, balanced community of lactobacilli and yeast instead of relying on chance wild colonization.
- 2Combine 1 part reserved soured milk with 3–4 parts fresh camel milk in a clean vessel.A 1:3–4 ratio drops the pH quickly enough to suppress spoilage organisms while leaving lactose for the culture to finish souring.
- 3Hold the mixture at ~25 °C for about 8 hours.The warmer phase accelerates early growth of lactobacilli and yeast before competing microbes can establish.
- 4Drop the temperature to ~20 °C for about 16 hours.A cooler finishing phase slows acid production, develops a rounder sour profile, and lets yeasts generate light carbonation.

Continuous-culture carryover
Each batch feeds the next, so the base is genuinely reusable rather than a single-use ferment.

Troubleshooting
Ferment finishes flat or yeasty rather than properly sour
Insufficient backslop, or temperatures held too low for too long so yeasts outpace the acid bacteria. → Increase the starter portion toward 1:3, shorten the 20 °C phase, and chill promptly once tartness is reached.
Off-flavors (rancid, bitter, or sulfurous)
Dirty vessels, contamination, or milk held too long before inoculation. → Use a clean jar, inoculate within hours of milking, and reserve starter only from batches that tasted clean.
Heavy wheying-off or curdling
Acid drop is too aggressive — over-long warm phase or starter ratio too high. → Shorten the 25 °C phase and reduce starter toward 1:4.
Culture dies and backslop fails to acidify
Carryover starter was overheated, frozen, or starved of lactose across too many cycles. → Bootstrap a new culture with a commercial live starter and rebuild the continuous line.
