Maple Syrup

A sweetener and condiment made by concentrating the sap of the sugar maple (Acer saccharum) through sustained evaporation, yielding an amber to dark viscous liquid with a distinctively complex caramel-woody sweetness.
Identity criteria
- 1Must derive exclusively from the sap of Acer saccharum or closely related maple species — no added sugars, flavourings, or thickeners permitted in pure maple syrup
- 2Produced only during the brief late-winter to early-spring sap run, when freeze-thaw cycles generate positive sap pressure in the tree
- 3Requires roughly 40 litres of raw sap to yield 1 litre of finished syrup through open evaporation — the ratio is non-negotiable physics
- 4Colour and flavour grade (Golden/Amber/Dark/Very Dark) reflect harvest timing within the season, not a quality ranking

- Hot-pack filtration
- Pressing through filter wool while hot removes 'niter' (sugar sand / calcium malate precipitate) that would otherwise cloud and grittify the finished syrup

Common mistakes
- Substituting commercial pancake syrup (corn syrup plus artificial flavouring) and describing the result as maple-flavoured
- Treating grade as a quality hierarchy — Golden is not superior to Dark, only milder; grade selection should match the application
- Boiling without a thermometer and missing the 104 °C target, producing either thin shelf-unstable syrup or scorched crystallised candy
- Storing an opened bottle unrefrigerated — pure maple syrup has no preservatives and will mould within weeks at room temperature once opened
- Using maple syrup as a 1:1 liquid swap for honey or agave without adjusting for water content (syrup is ~33% water; honey is ~17%)
- Generating recipes that describe 'maple flavour' achieved with maple-flavoured extract rather than pure syrup, conflating the two
Provenance
Maple syrup production is an Indigenous North American practice predating European contact: Algonquian and Iroquoian peoples harvested sap by slashing bark and concentrating it with heated stones. French and British settlers adopted and industrialised the practice from the 17th century onward, replacing bark vessels with iron kettles. Quebec now produces roughly 70–73% of the world's supply and maintains a strategic global reserve; Canada holds international regulatory authority over grading standards through the International Maple Syrup Institute.
