Substitutions
camel → beefadmissible
the two are interchangeable depending on what is available
ghee → rendered beef/camel fatadmissible
either fat works for the confit-style preservation
fat preservation → fresh-cooked meatinadmissible
without the drying and fat-sealing it is just fried meat, not the preserved muqmad
Common mistakes
- Insufficient drying, leaving moisture that spoils the preserve
- Not fully submerging the meat in fat, allowing air and rancidity
- Treating it as a fresh stir-fry rather than a preserved meat
- Using fatty rather than lean meat for the dried cubes
