Substitutions
Tuna (ikan tongkol) → Mackerel or other firm fishadmissible
Acceptable when tuna is unavailable, though tongkol is traditional
Coconut milk → Plain water or dairy milkinadmissible
Removes the defining richness and aroma; no longer nasi dagang
Glutinous-rice blend → Only plain long-grain riceinadmissible
Loses the characteristic clinging texture that distinguishes it from nasi lemak
Common mistakes
- Using only plain rice, missing the glutinous-rice stickiness
- Skipping fenugreek, losing the signature aroma
- Serving with a generic curry instead of tuna gulai
- Over-soaking so the rice turns to porridge
