Surströmming
Also: Fermented Baltic herring, Swedish sour herring
Surströmming is a Swedish specialty of Baltic herring fermented in a light brine until intensely pungent and salt-sour, traditionally eaten on thin tunnbröd with almond potato and onion.
Identity criteria
- 1Baltic herring caught in spring and lightly salted
- 2Fermented (not merely salted) so it continues to ripen in the can
- 3Famous for an extremely powerful, pungent aroma
- 4Salt-sour rather than sweet-pickled
- 5Eaten traditionally as part of an assembled wrap on tunnbröd
Components
Tunnbröd (thin flatbread)optionalThe classic serving wrap; soft or crisp
Almond potato (mandelpotatis)optionalTraditional accompaniment
Baltic herring (strömming)essentialSmall Baltic herring; the species/region defines the name
Raw or red onionoptionalSharpness to balance the fish
Sour cream / butteroptionalSmeared on the bread
Salt brineessentialA light brine — just enough to ferment, not enough to fully cure
Technique
- Lactic fermentation
- A controlled, low-salt ferment is what makes it surströmming rather than ordinary salted herring — it sours and develops its aroma
- Canning while still fermenting
- The fish continues to ripen in the can, which famously bulges with pressure

Substitutions
Fermentation → Plain salt curinginadmissible
Without fermentation it is just salt herring, not surströmming
Baltic herring → Atlantic herringinadmissible
Larger Atlantic herring changes the product; tradition uses small Baltic strömming
Tunnbröd → Crispbread or other flatbreadadmissible
Acceptable serving alternative
Common mistakes
- Confusing it with sweet pickled herring — surströmming is sour and fermented
- Opening the can indoors and without submerging it (it sprays brine)
- Using large Atlantic herring instead of small Baltic strömming
- Eating it plain rather than balanced with bread, potato, and onion
Provenance
A centuries-old Swedish (especially Norrland) preservation method using minimal salt to ferment Baltic herring, with a traditional late-August seasonal premiere.
