Substitutions
Sorghum → Barley or maizeadmissible
Grain choice varies regionally
Fermentation → Unfermented grain drinkinadmissible
Without fermentation it is not suwa (a beer)
Gesho → No bittering agentadmissible
Milder and sweeter; departs from tradition but still suwa
Common mistakes
- Expecting a clear, filtered, strong lager — suwa is cloudy and low in alcohol
- Skipping malting/germination so the grain won't ferment well
- Over-fermenting into vinegar
- Assuming it is non-alcoholic
Provenance
A traditional Horn-of-Africa home-brewed grain beer, kin to Ethiopian tella, brewed by households for festivals and gatherings in Eritrea.
