Whole, unpeeled taro corms (Colocasia esculenta) slow-cooked in a traditional Samoan earth oven (umu) beneath volcanic stones fired to intense heat, yielding a dense, slightly smoky starchy flesh that is the definitive carbohydrate staple of Samoan feasting culture.

- Leaf wrapping
- Encasing corms fully in banana or taro leaves before placement seals in steam and shields flesh from scorching; omitting leaves causes direct stone contact that chars and desiccates the exterior before the interior is done
- Slow stone-contact cooking
- Taro is placed on and covered by fired stones so stored radiant heat cooks it from all sides simultaneously; the slow, enclosed heat gelatinises starch uniformly and fully neutralises oxalate crystals — a shorter or hotter blast does neither
- Umu sealing and resting
- The entire umu is blanketed with additional leaves, then sometimes burlap or mats, to trap heat and steam for the full duration; breaking the seal early collapses the steam environment and produces unevenly cooked, dry corms

- Substituting a conventional oven and presenting the result as talo umu — the defining smoky, stone-contact character is absent
- Using wet, green, or resinous wood to fire the stones — produces insufficient heat and can impart off-flavours to the stones and leaves
- Treating all taro varieties as interchangeable — small, watery, or ornamental varieties lack the starch density needed and fall apart or dry out in the umu
Provenance
Taro (Colocasia esculenta) has been cultivated across Polynesia for at least two to three millennia, carried west-to-east by Lapita-descended seafarers as a founding crop of Pacific island agriculture. The umu earth-oven tradition is pan-Polynesian, predating European contact by centuries, and remains one of the most culturally continuous food practices in the Pacific. Origin is uncontested within the Polynesian cultural sphere; talo umu is specifically and firmly identified with Samoan social and ceremonial life.
