It is the essential building block for numerous Peruvian dishes, providing heat, fruity acidity, and characteristic color. The paste is not cooked beyond the initial blistering of the peppers, preserving the bright, fresh character that defines Peruvian flavor logic.

The 5:1 pepper-to-oil ratio by weight is the governing proportion. Oil is not merely a lubricant — it extracts capsaicin and fat-soluble carotenoids, creating a stable emulsion with the pepper's natural starches and pectin. Using less oil yields a stiff, pasty paste; using more yields a loose sauce. The classic paste should hold its shape on a spoon but spread easily.

Method
- 1Blister the ají amarillo peppers directly over a gas flame or under a broiler set to high, turning with tongs every 30–45 seconds until the skin is charred in spots and the flesh is softened.Direct dry heat caramelizes surface sugars, develops the pepper's characteristic fruity-sweet aroma, and loosens the skin for easy peeling. This caramelization is the only cooking the peppers receive.
- 2Transfer blistered peppers to a bowl and cover tightly with plastic wrap or a plate. Allow to steam for 10–15 minutes until skins are loose.Steaming raises the internal temperature and hydrates the pectin layer between skin and flesh, allowing the skin to slip off cleanly without tearing the flesh.
- 3Rub off all charred skin with your fingers. Make a small slit and scrape out the seeds and ribs with a small spoon or your thumb. For more heat, leave some ribs intact.The charred skin is bitter and papery. The seeds are texturally unpleasant. Ribs contain the highest concentration of capsaicin glands.
- 4Place peeled peppers in a food processor or blender. Add salt and garlic (if using). Begin blending, adding oil in a slow, steady stream until the paste is smooth and glossy.Blending breaks cell walls and releases pectins that act as natural emulsifiers. The slow oil addition allows pectin to form a stable emulsion with the oil droplets, creating a homogeneous, spreadable paste rather than a separated mixture.
- 5Taste and adjust salt. Transfer to a clean jar. If a thin layer of oil settles on top, do not stir it in — this oil cap acts as a preservative seal. Refrigerate.The oil cap seals the surface from oxygen, slowing browning and oxidation. Stirring it in before each use re-incorporates the protective layer.
Techniques that matter
direct-fire blistering
The open flame is the classical method in Peru. It provides intense, even heat that chars without cooking the flesh through, preserving the fresh, fruity character. Oven roasting is acceptable but produces less concentrated flavor.
steam peeling
Traditional technique that separates skin from flesh without water (which would leach flavor compounds and dilute the paste). The residual heat and steam rehydrate the pectin layer.
cold-process emulsification
No heat is applied after blending. The paste is essentially a raw emulsion of pepper in oil, stabilized by the pepper's own natural pectins and starches. This is what makes it a cold sauce — the emulsification is mechanical, not thermal.
Variations & derivatives
ají amarillo con huacatayLima and central coast
The pepper paste is blended with fresh huacatay (black mint) leaves, producing a verdant, anise-scented paste used specifically for ocopa sauce. The mint is added raw after the pepper paste is made.
ají amarillo con maníAndean regions, Lima
Peanuts or peanut paste are blended into the base for richness and body, particularly in some ocopa versions. The nuts act as an additional emulsifier and fat source.
ají de gallina baseLima, national
A looser version of the paste, often made with rehydrated dried ají amarillo or with additional bread soaked in the blended paste, yielding a thicker sauce used for the classic shredded chicken dish.

- fresh ají amarillo peppers → dried ají amarillo (ají molido) — Rehydrate dried peppers in warm water for 30 minutes, then proceed with peeling and blending. The flavor is more concentrated and slightly smoky. This is acceptable in Andean preparations.
- fresh ají amarillo peppers → frozen roasted peppers — Quality varies widely. Some have been overcooked, yielding mushy flesh. Only use if fresh peppers are unavailable and quality is verified.changes result

Troubleshooting
Paste turns brown within days despite refrigeration
Insufficient oil on surface, allowing oxygen contact. The capsaicin and carotenoids oxidize rapidly when exposed to air. → Press the paste flat to eliminate air pockets, then pour a ½-inch layer of fresh oil on top before sealing. Alternatively, freeze in ice cube trays for long-term storage.
Paste is gritty or has stringy fibers
Peppers were overripe (seeds had begun to harden) or blending was insufficient. Also occurs if peppers were steamed rather than dry-blistered. → Strain through a fine-mesh sieve, pressing with a spatula. For future batches, select firmer, yellower peppers and ensure thorough blending, or pass the finished paste through a sieve once.
Oil separates and pools at the top of the jar
This is normal and indicates the emulsion was not fully stabilized by pectin. → Stir thoroughly before each use. To prevent separation, ensure peppers are well-blended and salt is fully dissolved before adding oil. Some cooks add a teaspoon of Dijon mustard as an emulsifying aid.
Paste is too spicy to use as a base
Too many seeds and ribs left in. Also occurs if using overripe peppers, which have higher capsaicin concentration. → For future batches, remove all ribs and seeds, and select moderately ripe peppers (bright yellow, not orange-red). To rescue current paste, blend in additional oil and a small amount of sugar or cooked potato to dilute capsaicin concentration.
