Amsyar
Amsyar · Amsyar is a foundational lacto-fermented chili-garlic base used as a reusable building block in Southeast Asian-style pickling and condiment making. It is not a finished dish but a tangy, probiotic-rich concentrate that other sauces, sambals, marinades, and pickle brines draw upon for heat, aroma, and acidity.

The formula
1:1 chili:garlic by weight, 2% salt by total vegetable weight, splash of lemon juice
Weigh vegetables; dissolve salt at 2% of total weight in unchlorinated water to cover.

Method
- 1Weigh trimmed chilies and garlic, then calculate salt at 2% of total vegetable weight.Accurate salt percentage is the single biggest variable in safe, crisp lacto-fermentation.
- 2Toss chilies and garlic with the measured salt and pack firmly into a clean wide-mouth jar, pressing until liquid rises.Salt draws cell moisture via osmosis, creating the brine in which fermentation actually occurs.
- 3Pour in lemon juice and top up with unchlorinated water until solids are fully submerged by at least 2 cm.Submerging under anaerobic liquid prevents mold and yeast blooms on the surface.
- 4Seal with a loose lid or fermentation airlock and leave at cool room temperature (18–22 °C) for 5 to 14 days.Wild lactobacillus on the pepper and garlic skins convert sugars to lactic acid; cooler temps slow the process and preserve color.
- 5Skim any kahm yeast, then blend or pound the solids to a coarse paste, returning it to its brine.Texture is a chef's choice — paste or chunk — but the slurry must stay submerged to remain protected.
- 6Strain off and reserve the brine; transfer the paste to a sealed jar, cover with a thin layer of reserved brine, and refrigerate.Refrigeration halts further acidification and the brine cap prevents oxygen contact; the reserved brine becomes an inoculant for future ferments.
Techniques that matter
2% salt brine by weight
Reliably selects for lactobacillus while suppressing spoilage organisms, mirroring the gateway-ferment template used for cucumber pickles.
Full submersion under anaerobic liquid
Exposed surface area invites kahm yeast and mold; keeping peppers below the brine line is the structural defense.
Wild (un-inoculated) fermentation
Chili and garlic skins carry native lactobacillus, so no starter culture is required — the same principle that powers sauerkraut and kosher dills.

Troubleshooting
White film on the surface
Kahm yeast — harmless but signals oxygen exposure → Skim thoroughly, stir the top layer back in, and ensure solids stay submerged under brine.
Soft, mushy texture and harsh acetic smell
Over-fermentation, often from warmth above 24 °C or salt under 1.5% → Discard or relegate to cooked dishes; recalibrate salt to 2% and ferment cooler next batch.
Little to no tang after 10 days
Iodized salt, chlorinated water, or jar sealed too tightly trapping CO₂ → Switch to non-iodized salt, use filtered water, and vent the lid daily for the first week.
Pink or fuzzy growth
True mold from prolonged air exposure → Discard the entire batch, sterilize the jar, and repack with greater headspace submerged.
