arrowroot slurry
ararut · A starch-and-water paste used to thicken sauces, soups, glazes, and pie fillings. Arrowroot gelatinizes at lower temperatures than other starches, produces a clear, glossy, smooth gel, and resists breakdown in acidic liquids and during freezing — properties that make it distinct from cornstarch or wheat-flour thickeners.

The formula
1:1 arrowroot : cold water
Use 1–3 tbsp arrowroot per 240 ml (1 cup) of liquid for light-to-medium body. For a glaze: 1 tbsp per 60 ml liquid yields a pourable coating. For pie filling: 2–3 tbsp per cup yields a sliceable gel. Scale ratio holds regardless of quantity.

- Made with cold water only — never hot or boiling liquid in the mixing stage
- Bloomed before addition — starch fully hydrated in water before contact with heat
- Added off-steam or to liquid below 85 °C, then brought gently to serving temperature
- Never boiled vigorously after thickening — high heat breaks the gel and causes thinning

Method
- 1Measure arrowroot starch into a small bowl or jar.Precise measurement ensures predictable thickening power and prevents lumps from excess starch.
- 2Add an equal weight of cold water to the starch.The 1:1 ratio creates a smooth, fluid paste that disperses instantly in hot liquid. Too little water produces a stiff lump; too much dilutes thickening power.
- 3Whisk or stir vigorously until the mixture is completely uniform — no streaks, no dry pockets.Proper dispersion ensures all starch granules are fully hydrated (bloomed) before heat. Incomplete mixing produces clumps in the finished sauce.
- 4Add the slurry to hot (but not boiling) liquid in a thin stream while stirring continuously, or stir the slurry into the base off-heat first, then return to low heat.Continuous stirring prevents settling and ensures even distribution of swollen starch granules throughout the sauce.
- 5Heat gently to just below simmer (71–85 °C) until the sauce clears and thickens noticeably.Arrowroot gelatinizes fully by 71–78 °C. Exceeding 90 °C or boiling causes the gel structure to break, resulting in a thin, ropy sauce.

Techniques that matter
Blooming (hydrating) the starch
Starch granules must absorb water and swell before heat is applied. Adding dry starch directly to hot liquid causes immediate surface gelatinization, forming a rubbery coating around unhydrated granules — producing lumps that cannot be stirred out.
Tempering
Adding the cold slurry to a small amount of hot liquid first (rather than directly into a large pot) equalizes temperature gradually, preventing local overheating that can break the gel.
Thin-stream addition with stirring
A slow, distributed pour gives each starch granule immediate access to liquid, ensuring even thickening throughout the vessel.

Oil-enriched arrowroot slurryAsian savory glazes
Add 1 tsp neutral oil per tablespoon of arrowroot to the slurry. The fat coats starch granules, delaying gelatinization slightly and improving mouthfeel in glossy pan sauces and noodle sauce bases.
Arrowroot-cornstarch blendFruit pie fillings
Combine 50/50 arrowroot and cornstarch. Arrowroot provides clarity and freeze-thaw stability; cornstarch provides body at higher temperatures. This blend is the professional standard for blueberry and cherry pies.
Tapioca slurry (similar function)Brazilian, Southeast Asian
Cassava/tapioca starch produces a similar clear gel but gelatinizes at higher temperatures (65–80 °C) and handles prolonged boiling better. Not a 1:1 swap in delicate sauces.
Arrowroot in coconut milkSoutheast Asian curries
Bloom arrowroot in a small amount of cool coconut milk before stirring into the curry base. The natural fat in coconut milk requires extra care to avoid curdling; blooming in a thin portion first minimizes this risk.

- cornstarch slurry (1:1 cold water) → arrowroot slurry — Arrowroot and cornstarch are both 1:1 bloomed thickeners, but arrowroot produces a clearer, glossier gel and tolerates acid better. Cornstarch produces an opaque gel and breaks down in acidic or frozen preparations. For clear sauces and glazes: swap 1:1. For fruit pies and frozen fillings: arrowroot preferred.
- wheat flour roux → arrowroot slurry — Roux requires cooking fat and flour for 2–5 minutes to eliminate raw taste and develop structure. Arrowroot slurry thickens instantly without a roux and produces a lighter, clearer result. Use 1–1.5 tbsp arrowroot per cup of liquid to approximate 2 tbsp flour roux. Troubleshooting
Sauce is lumpy with white specks despite stirring
Starch was added dry or the slurry was too thick and clumped on contact with heat. Uneven hydration produces permanent lumps that will not dissolve. → Make a fresh batch of slurry (1:1 arrowroot:water) and add it gradually while whisking vigorously. If lumps persist, strain the sauce through a fine-mesh sieve and reboil the strained portion with a fresh addition of properly bloomed slurry.
Sauce thins after initially thickening
The sauce was boiled or held at high heat after thickening. Arrowroot gels are heat-sensitive; temperatures above 90–95 °C cause the swollen granules to burst and lose viscosity. → This is irreversible for the affected portion. Start fresh: add a new, properly bloomed slurry to the base at low temperature and bring only to serving warmth (71–80 °C).
Sauce gels excessively — becomes too stiff
Too much arrowroot relative to liquid, or the sauce was over-reduced after thickening. The gel simply concentrated as liquid evaporated. → Dilute with additional liquid and reheat gently. Arrowroot gel remelts below gelatinization temperature; gentle warming (below 75 °C) restores fluidity without re-thickening.
