Bagoong Base

The formula

1 bagoong : 1.5–2 aromatics : 0.5 fat

100 g bagoong → 150–200 g aromatics (shallot, garlic, chili) → 50 g fat (coconut oil, palm oil). Yields ~250–350 g base, seasons 4–6 main dishes. Scale by multiplying all weights equally.

Method

Blooming

Maillard reaction

Slightly caramelizing the aromatics before adding bagoong creates pyrazines and other savory aroma compounds that layer with the fermented flavors.

Controlled evaporation

Cooking the paste until the moisture from the jar evaporates concentrates flavor and gives a 'toasted' quality rather than a steamed, dull result.

Troubleshooting

Bitter, acrid flavor
