Baltic quark (acid-set fresh curd cheese)
Kohupiim · A fat-free or low-fat acid-set fresh curd cheese traditional across the Baltic states (Estonia, Latvia, Lithuania), made by fermenting pasteurized skimmed cow's milk with a mesophilic lactic starter (often buttermilk or rūgušpiens), optionally with a trace of rennet, then gently scalded and drained to a soft, moist curd of roughly 18–22% total solids. It is a foundational reusable component rather than a finished dish.

Drain to ~18–22% total solids. Traditional Baltic style is fat-free; whole milk gives a richer but non-classical version.

Method
- 1Heat pasteurized skim milk to ~80 °C (180 °F), then cool to 22–25 °C.Scalding denatures whey proteins, which improves yield and gives a cleaner white curd; cooling protects the mesophilic culture.

Substitutions
- Baltic quark → Fromage blanc — Use as is; fromage blanc may need extra draining (30–60 min) to reach ~20% solids.
- Baltic quark → Cottage cheese (full-fat) — Blend briefly to break up curds and drain if wet; flavor and texture will be coarser.
- Baltic quark → Strained Greek yogurt — Works in cold sauces and spreads, but tang is sharper and protein matrix more gel-like.
- Mesophilic starter → Buttermilk or active rūgušpiens — Classical home substitute; use 1–2% by volume of the milk.
- Mesophilic starter → Live plain yogurt (thermophilic) — Will ferment successfully but produces a yogurt-style flavor; reduce to ~1% to avoid over-acidification.
Troubleshooting
Runny curd and low yield
Insufficient acid development — milk too cold, weak/old starter or fermentation cut short → Hold at 22–25 °C for a full 18–24 h, refresh starter, and confirm pH ≈4.5 before scalding.
Grainy, dry curds
Over-scalding above ~55 °C or cutting/stirring too aggressively → Scald gently to only 45–50 °C and avoid breaking the curd before draining.
Bitter or harsh flavor
Over-fermentation (pH < 4.0) or too much rennet → Shorten fermentation and use only a trace of rennet (≤1 drop per 10 L).
Whey stays milky and curds stay loose
Pre-scald too cool or starter inactive → Pre-heat milk to a true 80 °C and use a fresh, active mesophilic culture at 1–2%.
