Biscuit Sponge
Génoise · A classic European foam cake built by whipping whole eggs with sugar over gentle heat to create a stable, aerated foam, then gently folding in a measured quantity of flour and optionally melted butter. The result is a tender, fine‑crumbered cake designed to absorb syrups and support fillings in composed desserts. It is the foundational sponge of French, Italian, and much of Central European patisserie.

The formula
egg : sugar : flour = 1 : 1 : 1 (by weight); butter = 0.25–0.30 × flour weight (optional)
All primary ingredients are weighed equally. Butter is the only variable; omitting it yields a génoise nature, adding it yields a génoise au beurre.
Identity
- Whole eggs whipped with sugar over heat — not separated, not leavened with baking powder

Method
- 1Combine eggs and sugar in a clean, dry bowl set over a bain‑marie (barely simmering water). Whisk constantly at moderate speed.Gentle heat dissolves sugar fully and denatures egg proteins gradually, allowing air cells to inflate without premature coagulation. Target temperature is 45–50 °C — warm to the touch but well below protein coagulation.
- 2Continue whisking over heat until the mixture reaches 45–50 °C and the sugar is fully dissolved. The foam will be pale, slightly thickened, and roughly tripled in volume.Dissolved sugar prevents grittiness and ensures a stable foam. Elevated temperature also accelerates emulsification of yolk lipids into the foam.
- 3Remove from heat and continue whisking (stand mixer or balloon whisk) until the batter cools to room temperature and falls in a thick, wide ribbon that holds its shape briefly before dissolving.The ribbon stage indicates optimal foam stability and air‑cell structure. Over‑whipping collapses the foam; under‑whipping yields a dense, flat crumb.
- 4Sift the flour (and salt) in two or three additions over the batter. Fold each addition with a large rubber spatula using wide, deliberate sweeps — cut through the centre, turn the bowl, repeat.Gentle folding preserves the incorporated air. Adding flour in stages prevents lumps and minimises gluten development.
- 5If using butter, fold it in last. Pour cooled, melted butter down the side of the bowl and fold once or twice — it should streak through the batter without fully incorporating. Complete the fold only until the streaks disappear.Butter is less dense than the batter, aiding incorporation. Over‑folding deflates the foam; butter adds richness, tenderness, and extends shelf life.
- 6Pour into an ungreased, unlined tin (or line only the bottom). Bake at 170–180 °C (conventional) until the sponge is pale gold, springs back firmly when pressed, and a skewer inserted 2 cm from the edge comes out clean — centre should read ~96 °C.An ungreased tin lets the batter cling and rise evenly. Techniques that matter
Swiss meringue / sabayon method (whipping over heat)
The defining technique of génoise: heat denatures egg proteins gradually and dissolves sugar simultaneously, producing a foam far more stable than one whipped cold.
Ribbon test
A thick ribbon that holds briefly before dissolving indicates optimal foam density — enough structure to support flour without collapsing when folded.
Gentle folding (remuage)
Preserving incorporated air is paramount. Folding should take no more than 40–50 strokes total from first flour addition to poured batter.
Bain‑marie discipline
Water must never touch the base of the mixing bowl. Boiling water creates super‑heated steam that locally overcooks egg edges, forming tough protein skins and reducing volume.

Génoise natureFrance
Plain génoise with no butter. The leanest, most neutral sponge; ideal for very wet or strongly flavoured fillings that need maximum absorbency.
Génoise au beurreFrance
With butter folded in after the ribbon stage. Richer, more tender crumb; the most common commercial and restaurant version.
Biscuit rouléFrance
A génoise‑type batter baked in a shallow tray and rolled while hot around a filling, then unrolled after cooling. The classic base for bûches de Noël and yule‑log rolls.
Pan di SpagnaItaly
Italian sponge uses the same 1:1:1 ratio but typically omits butter and may incorporate additional egg yolks for a richer, yellower crumb. Baked in ring tins for trifle and tiramisù layers.
Butter sponge (UK)United Kingdom
British sponge cakes often use the creaming method (butter + sugar aerated first) rather than egg‑foam, resulting in a different, denser crumb. True biscuit sponge always uses the egg‑foam method.
Biskapskaka / BisquitpandScandinavia
A Scandinavian sponge base similar to génoise, used for layer cakes (e.g., prinsesstårta, smultrontårta), often with potato starch replacing part of the flour for a finer, more melting crumb.

Troubleshooting
Dense, flat, rubbery crumb

Tunnelling (large irregular holes)

Dry, crumbly texture

Gritty or sandy texture
Sugar not fully dissolved before baking; coarse sugar used without extended whisking → Always whisk egg‑sugar over heat until sugar dissolves (no graininess when rubbed between fingers). Use caster or superfine sugar. Ensure bain‑marie water is hot enough.
