Black Garlic
黒にんにく · Whole bulbs of garlic aged under controlled heat and humidity until the cloves turn ebony-black, attain a soft, jammy texture, and develop a complex flavor profile that merges sweetness, umami depth, acidity, and subtle roasted notes — nothing like raw or roasted garlic. It is a foundational flavor base, not a seasoning garnish.

The master variable is TIME at TEMPERATURE. The ratio is defined by input weight vs. finished yield. Classic thermal progression: 60–70 °C (140–158 °F) held for 40–96 hours in a humid environment. Modern acceleration: 80–85 °C (176–185 °F) in a rice cooker or commercial black garlic box for 8–12 hours. Optional: 1–2% fine sea salt by garlic weight dusted on the vessel base as a humidity buffer — not incorporated into the garlic itself.

Method
- 1Select and prep the bulbs. Choose firm, unblemished heads. Peel only the loose, papery outer layers. Do not separate cloves — keep the bulb intact. This is critical: intact papery husks regulate heat and moisture transfer and prevent scorching at the clove surface.Whole-bulb heating ensures even thermal diffusion through the papery husk and clove-to-clove conduction. Pre-peeled cloves brown irregularly and risk burning.
- 2Set up the controlled-heat environment. Traditional: place bulbs on a wire rack in a large covered vessel (stockpot, hotel pan sealed with foil) with a small water dish beside them. Maintain 60–65 °C (140–149 °F) for 48–96 hours. Modern shortcut: place bulbs in a rice cooker on the 'warm' setting (≈ 60–70 °C) for 8–12 hours, or in a commercial black garlic box at 65–70 °C for 12–18 hours. - 3Monitor humidity. In dry environments (dehydrator, oven), add a water dish. In humid environments (rice cooker), leave the lid slightly ajar to prevent condensation dripping back onto garlic. Target 80–90% relative humidity inside the vessel.Controlled humidity prevents the garlic surface from drying and hardening before the interior fully caramelizes. Too wet and the garlic steams rather than browns; too dry and the exterior burns while the interior remains raw-colored.
- 4Check doneness at the low end of the time range. At 48 hours (traditional) or 8 hours (rice cooker), open and press a central clove with a fingernail. It should yield like a ripe plum — no resistance, no raw interior. If not ready, re-seal and continue in 4–6 hour increments. The finished product will smell deeply sweet, balsamic, and faintly sour.Doneness is sensory, not time-bound. Bulb size, varietal, and humidity cause large variance. Overcooking past optimum yields carbonized, bitter garlic with no caramel complexity.
- 5Cool and cure. Spread finished bulbs on a wire rack at room temperature, uncovered, for 2–6 hours to surface-dry and allow internal moisture to equilibrate. Black garlic's color and flavor depth come from extended Maillard reactions run at 60–80 °C rather than the high-heat browning of conventional roasting. At these temperatures, complex Amadori and Heyn products accumulate slowly, producing the characteristic ebony color without bitter melanoidin overaccumulation.
Enzymatic Conversion of Allicin to Sallylcysteine
The key chemical transformation. Alliinase (a C-S lyase) converts alliin to allicin during cellular disruption; under sustained heat, allicin degrades to diallyl disulfide and eventually to Sallylcysteine sulfoxides — compounds unique to black garlic that contribute its distinctive umami and potential antioxidant activity.
Osmotic Dehydration and Moisture Migration
The garlic loses 65–70% of its original weight. Water migrates out as soluble sugars concentrate. This is not evaporation-drying; it is cellular osmotic drying driven by the heat gradient. The result is a soft, not desiccated, texture because residual bound water remains.
Humidity Management in Enclosed Thermal Vessels

Troubleshooting
Garlic turns ashen, hard, and bitter — exterior burned, interior still raw-colored
Temperature too high (>90 °C) or heating method too dry (no humidity control). The exterior Maillard-burned to melanoidin bitterness before the interior had time to convert. → Reduce temperature to 60–70 °C and add a water vessel to the heating chamber. If burning recurs, wrap bulbs loosely in damp cheesecloth inside a sealed vessel.
Garlic stays pale, mushy, and smells like boiled garlic — no black color or complex flavor
Temperature too low (<55 °C) or time insufficient. The alliinase enzyme may have been denatured by pre-existing mild heat (brief steaming before aging) and the Maillard threshold was never reached. → Ensure starting temperature is 60–65 °C and hold consistently. Check that the heating appliance is maintaining temperature and not cycling. A probe thermometer inside the vessel is essential. Extend time to 72–96 hours if color is pale at 48 hours.
Mold on stored bulbs within 2–4 weeks
Moisture was introduced before storage — either insufficient curing (surface drying) or refrigeration. The inner clove is moist enough to support Aspergillus niger growth. → Discard any visibly moldy bulbs. Inspect remaining; if sound, re-cure at room temperature on a wire rack for 24 hours. Store in a paper bag in a cool, dry, dark cabinet. Do not refrigerate. Properly cured and stored black garlic is shelf-stable for 3–6 months.
Inconsistent color — some cloves black, others pale or rubbery in the same bulb
Bulb was damaged or cracked before processing, allowing uneven heat penetration. One or more cloves were loosely attached to the base plate, creating a heat sink. → Select undamaged bulbs only. Cut away any discolored or underprocessed cloves before use; the properly black cloves are fully usable. The issue is selection, not process.
