The formula

Equal weight sugar and blanched peel. Water is only to dissolve the initial sugar. Syrup concentration increases with each cooking stage. Final coating: 2–3 tbsp sugar per 250g finished peel.

Method

Troubleshooting

Peel is tough and rubbery, or bitter flavor remains

Insufficient blanching cycles or too-rapid single-stage cooking. The bitter compounds were not fully leached, or sugar didn't penetrate the pith adequately.Return to fresh syrup with additional sugar (one-third the peel weight) and repeat 2–3 more cooking-rest cycles. Peel is wet, sticky, or sweating after storage

Insufficient final drying, or storage in humid conditions. Storage
