Celozrnný chlieb dough

Cesto na celozrnný chlieb · A foundational Slovak/Czech lean bread dough built primarily from whole-wheat flour, water, yeast (or sourdough culture), salt, and optional caraway. It is the reusable, intermediate base from which the finished loaf 'celozrnný chlieb' (whole-grain bread) is shaped and baked.

The formula

Whole-wheat flour : water ≈ 2 : 1.5 (by volume, ≈65% hydration)

Verified against Top Recepty (650 g mixed flour : 500 ml water ≈ 1.3 : 1) and bracketed by Cookidoo (600 g : 330–350 ml).

Identity

  • Slovak/Czech whole-grain bread tradition
  • 100% whole-wheat (or whole-grain blend) lean dough
  • Staged fermentation (autolyse + multiple rises)
  • Naturally flavored with caraway (kmín)
  • Dense, moist crumb with a rustic crust
  • Reusable base component, not a finished dish

Ingredients

Basewhole-wheat flour (celozrnná pšeničná múka), sometimes blended with rye and speltBackbone of the dough; absorbs more water than white flour.
Liquidlukewarm waterHydrates bran and gluten; ratio ≈ 2 : 1.5 flour : water by volume.
Leaveningfresh yeast (droždie) 8–20 g, or active rye sourdough (žitný kvások)Fresh yeast used in 3 of 4 sources; sourdough version replaces it entirely.
Seasoningfine salt10 g (Cookidoo) to 1 tbsp (Top Recepty); controls fermentation and flavors crumb.
Flavorcaraway seeds (kmín), crushedTraditional Slovak/Czech addition; appears in both Jídlo.cz recipes.
Sweetenerhoney or cane sugar (1–1½ tsp)Used to feed and wake the yeast at the start.
Enrichmentextra-virgin olive oil (≈30 g / 2 tbsp)Adds softness and shelf life; from Cookidoo and Top Recepty.
Acidapple cider vinegar (1 tbsp)Softens bran and improves crumb tenderness in bread-machine version.

Method

  1. 1Autolyse: stir whole-wheat flour with most of the water until no dry pockets remain; rest 20–60 min (or overnight in the fridge, as in the sourdough recipe).Lets bran fully hydrate and gluten begin organizing, which counteracts whole wheat's reputation for dense, sandy crumbs.
  2. 2Add a portion of fresh yeast (and a pinch of honey/sugar) to the rested dough; mix briefly.Triggers the first fermentation so the yeast can multiply in a flour- and water-rich environment without salt inhibiting it.
  3. 3First rise: cover and ferment until roughly doubled, about 45–90 min in a warm spot.Builds initial volume and the mildly tangy, aromatic base characteristic of celozrnný chlieb.
  4. 4Work in salt, remaining yeast (if staged), crushed caraway, and any olive oil/vinegar; knead lightly to a soft, elastic ball.Salt now tightens gluten and seasons the crumb; caraway distributes evenly without interfering with the prior rise.
  5. 5Second rise (and optional final proof): 30–60 min, or until puffy when pressed.Allows the dough to relax, develop flavor, and reach final loaf volume before shaping.
  6. 6Shape into a round or oval loaf, place seam-down in a floured banneton or pan, and proof a final 20–40 min; meanwhile preheat oven (or load into bread machine on 'Whole Wheat' program).Establishes crumb structure and oven spring; the bread-machine route (Top Recepty, Jídlo.cz) automates rises and baking on a single program.
  7. 7Bake until deep brown and hollow-sounding (typically 35–45 min at ~200 °C); cool on a rack before slicing.Sets the crust, finishes crumb gelatinization, and lets steam redistribute so the slice isn't gummy.

Techniques that matter

Autolyse

Pre-hydrating whole-wheat flour is the single most cited fix for dense, dry loaves (Slovak Cooking attempt #20 rationale).

Staged yeast addition

Adding yeast in two portions protects it from salt early on and prolongs fermentation for better flavor.

Bread-machine 'Whole Wheat' program

Two of the four sources simply load ingredients and use a dedicated whole-wheat cycle.

Sourdough (kvások) conversion

Replacing yeast with an active rye levain and a 10–12 h rozkvas gives the traditional kváskový variant its deeper flavor.

Variations & derivatives

Sourdough celozrnný chliebJídlo.cz (Czech sourdough recipe)

Rozkvas of 30 g rye starter + 50 g rye whole wheat + 100 g wheat whole wheat + 170 g water; long 10–12 h ferment; caraway kept.

Three-grain celozrnný chliebTop Recepty (Slovakia, bread machine)

Adds 40 g rolled oats plus spelt and rye whole-wheat flours, plus Provençal herbs and apple-cider vinegar for a softer crumb.

Wheat-rye blendJídlo.cz (wheat-rye recipe)

160 g fine rye whole-wheat + 340 g whole-wheat flour 'Speciál' + 260 g rye sourdough; caraway in.

Thermomix / Cookidoo versionCookidoo.cz

600 g whole-wheat flour + 330–350 g water + 10–15 g fresh yeast + 30 g olive oil + honey + 10 g salt; brushed with oil.

Substitutions

  • fresh yeast (droždie)active dry or instant yeastUse ~⅓ the weight; bloom in lukewarm water with the honey first.
  • whole-wheat flour onlywhole-wheat + rye + spelt blendCommon regional move; increase hydration slightly because rye absorbs more water.
  • caraway seeds (kmín)fennel seeds or omitCaraway is traditional but not mandatory; fennel is the closest flavor cousin.
  • olive oilmelted butter, lard, or sunflower oilFunction is tenderness and shelf life; flavor profile will shift.
  • commercial yeastrye sourdough levainRequires an overnight rozkvas and longer proof; produces the kváskový variant.

Troubleshooting

Dense, dry, sandy crumb (the classic complaint cited by Slovak Cooking after 20 attempts)

Whole-wheat bran shortens gluten strands and steals water from the crumbExtend autolyse to at least 30 min (or overnight in the fridge), push hydration toward 75–80%, and add a small amount of oil or applesauce for tenderness.

Loaf collapses or has a gummy interior

Underbaked or final proof went too longShape more tightly, shorten final proof, and bake until internal temperature reaches ~95 °C / 205 °F before cooling fully.

Pale, soft crust despite long bake

Too much surface moisture (olive-oil brush from Cookidoo) or low oven temperatureBake at ~220 °C with steam for the first 10 min, then drop to 190 °C; skip the oil brush if a crunchier crust is wanted.

Weak rise / heavy dough

Salt added too early killed yeast, or yeast was oldUse the staged method (yeast in, salt only after first rise) and verify yeast is active by blooming it in honeyed water.

Storage

Keeps 3–4 days at room temperature; up to 3 months frozen (sliced)Wrap the fully cooled loaf in a clean linen towel, then loosely in a paper bag; avoid plastic until fully cool to prevent sogginess. Slice and freeze in zip bags for longer keeping. Reheat: Spritz with water and refresh in a 180 °C oven for 8–10 min; or toast slices directly.
