Confit Garlic
confit d'ail · Whole or halved garlic cloves gently submerged in fat and cooked at low temperature until tender, sweet, and spreadable. The fat is equally transformed, becoming a fragrant, golden-infused oil. A foundational component in French and Mediterranean cooking, it yields two usable products from a single technique.

The formula
1 part garlic : 1 part fat by weight; fat must fully submerge the cloves
Classic French confit d'ail uses duck fat or olive oil. Some traditions use 2 parts fat to 1 part garlic for insurance against evaporation and to ensure complete submersion throughout cooking. Aromatics (thyme, bay leaf) are additions, not part of the core ratio.

Method
- 1Separate garlic cloves, peel thoroughly, and pat completely dry with towels.Surface moisture causes the fat to spit and the garlic to steam instead of confit. Dry garlic ensures proper Maillard and caramelization reactions without steaming.
- 2Weigh the peeled garlic cloves. Weigh out an equal weight of fat (1 : 1 ratio). Place garlic in a heavy pot or deep skillet.Equal weight ensures complete submersion. A heavy pot distributes heat evenly, preventing hot spots that could burn the submerged garlic.
- 3Add the fat to the pot with the garlic over medium-low heat. Add aromatics if using. Bring slowly to 80–90 °C (175–195 °F).Slow heating allows the fat to penetrate the garlic gradually. 80–90 °C is the critical zone: hot enough to transform the garlic's sugars and proteins through Maillard and caramelization, but cool enough to avoid burning before the interior is cooked.
- 4Maintain at 80–90 °C for 45–90 minutes, occasionally nudging the cloves gently, until they are completely tender when pierced with a skewer and a pale golden color.The long, gentle cook drives off water from the garlic (which floats initially), allows fat to replace that moisture, and converts harsh allicin into sweet, mellow flavor compounds. Color should be pale gold — not deep brown, which signals over-confit.
- 5Remove from heat. Season with salt immediately. Allow to cool slightly, then transfer cloves and fat together to a clean, dry glass jar, pressing cloves below the surface of the fat.Salting while warm allows absorption before the surface cools. Keeping cloves fully submerged in fat as it cools creates an anaerobic seal, essential for shelf stability.
Techniques that matter
Low-temperature fat submersion
Fat transfers heat more gently than water or air. Submerging garlic in fat at 80–90 °C allows the interior to cook through without the surface drying or burning — impossible to achieve by dry roasting.
Moisture displacement
As the garlic heats, water inside migrates out. The fat, which the garlic has rejected in raw form, gradually replaces that water — a physical transformation that explains the texture change from sharp and firm to soft and mellow.
Anaerobic preservation
Sealing the finished product entirely under fat excludes oxygen. Combined with the salt and the cooking heat, this creates a stable environment where the confit keeps for weeks refrigerated.

Provençal olive oil confitProvence, France
The southern French standard. Extra-virgin olive oil replaces duck fat, sometimes with rosemary and sage. The infused oil is used directly as a bread dip or finishing oil.
Garlic butter confitNorthern Europe
Garlic cooked in butter (or half butter, half oil) at low temperature until golden and spreadable. The butter becomes garlic butter. Used in seafood and poultry.
Spiced garlic confitSouthern Italy
Garlic confited in olive oil with Calabrian chili, dried oregano, and lemon zest. The fat becomes a spicy finishing oil for pasta and grilled meats.

Substitutions
- Duck fat → Extra-virgin olive oil — Most direct substitute; gives a lighter, fruitier character. The most accepted swap in practice.
- Duck fat → Ghee or clarified butter — Higher smoke point than butter, neutral enough to let garlic shine. Works well but changes flavor profile.
- Duck fat → Vegetable oil — Functional for submersion but loses the savory depth. Not recommended for finished flavor, acceptable for texture alone.changes result
- Garlic → Shallots — Shallots can be confited in the same manner using the same ratio, yielding a milder, sweeter spread. Used in the same applications as garlic confit in some preparations.
Troubleshooting
Garlic burns even though fat covers the cloves
Temperature was measured with a dial indicator instead of a probe thermometer, or heat was too high. Fat can exceed 150 °C even at a 'low' dial setting if the flame is too high. Also: wet garlic or moisture in the pot causing localized superheating. → Always use a probe thermometer. Start with completely dry garlic. Bring fat to temperature over medium-low, then reduce to the lowest flame that maintains 80–90 °C. If burning occurs, discard and restart — burnt garlic compounds cannot be fixed.
Garlic turns rubbery and remains firm throughout cooking
Garlic was cooked at too-low a temperature for insufficient time, or the garlic was old and dehydrated before cooking. Insufficient fat also allows the surface to firm up before the interior softens. → Increase cooking time at the correct temperature (80–90 °C) by 20–30 minutes. If firm after 90 minutes, the garlic was likely past its prime. Use firm, tight-headed garlic next time.
Infused fat turns cloudy, separates, or develops off-smell
Moisture was trapped in the jar during cooling; or the fat was not strained before storage, leaving garlic solids in contact with air at the surface. Water in the fat creates an environment for bacterial growth. → Strain the fat through a fine-mesh sieve into a clean, dry jar immediately after cooking, before any cooling. Press garlic cloves below the fat surface. Refrigerate and use within 2 weeks, or freeze the fat separately in ice cube trays.
Confit tastes bitter and harsh
Garlic was overcooked at high temperature, causing excessive Maillard browning and bitter compound formation (pyrazines, furans). Or garlic was sprouted, which concentrates harsh compounds. → For future batches: lower temperature, shorter time, use firm un-sprouted garlic. Bitterness from overcooking cannot be reversed; discard and restart.
