Butter, almond powder, and sugar are held at 1:1 by weight. Eggs provide moisture and structure at roughly half the butter weight — three large eggs (~150 g) per 250 g each of the other ingredients is the classical standard. Adding ~25–30 g flour per 250 g butter firms the baked cream and reduces spreading.

Method

Starch gelatinization (in flour-thickened variations)

When the filled pastry bakes, heat swells starch granules in flour-thickened versions, creating a set structure that holds shape and resists spreading on the plate.

Maillard reaction

Butter's milk solids and the almonds' proteins and sugars undergo Maillard browning during baking, developing the characteristic deep, nutty, caramelized flavor of frangipane-style fillings.

Variations & derivatives

crème de noisetteFrance (Auvergne, Rhône-Alpes)

Hazelnut powder replaces almond powder 1:1. Traditionally uses hazelnuts (50–100%) for a more assertive, slightly bitter, roasted flavor. Common in tarte aux noisettes and some financiers.

crème frangipane (classical)France

Crème pâtissière is folded into crème d'amande (typically 1:1 ratio) before use. This combination adds cooked-starch structure and a smoother, pastry-cream character. Many modern cooks omit the crème pâtissière and call the result frangipane — a conflation of terms.

pâte d'amande (crème d'amande ferme)France / Belgium

Reduced moisture version: less egg (use ½ to ¾ egg per 250 g butter) and sometimes 10% beaten egg white added for structure. Used as a modeling paste for decorations or as a denser filling in certain Genoise-based cakes.

pistache crèmeFrance
