The formula

3:1 crème pâtissière : Italian meringue

Example: 600 g cooled crème pâtissière + 200 g Italian meringue (from 75 g whites + 90 g sugar cooked to 121 °C). Scale in whole batches; use immediately. Uncooked base (crème pâtissière) yields ~750 g per litre of milk.

Identity

  • Must be made with Italian meringue — French meringue will weep and collapse.
  • The base must be cool enough to hold (below ~50 °C) before folding in meringue, but warm enough to stay fluid (~45 °C).
  • The finished cream must be used immediately — it sets at room temperature and does not hold well refrigerated.
  • The starch content of the base is non‑negotiable — it provides the gel structure that traps air cells from the meringue.
  • The egg yolks in the base must be fully cooked; the egg whites in the meringue are set by the hot syrup and must not be pre‑cooked.

Ingredients

Method

  1. 1Make crème pâtissière: scald milk with vanilla. Whisk yolks, sugar and cornstarch until pale. Temper in the hot milk, return to pan, cook to a thick boil for 2 minutes, remove from heat, stir in butter. Spread thin on a tray, cover with film, cool to 45 °C.Full boiling activates cornstarch fully; thin cooling prevents skin and keeps the base fluid enough to fold. 45 °C is the window — cool enough not to scramble meringue, warm enough to stay pourable.
  2. 2Make Italian meringue: cook sugar and water to 121 °C. Simultaneously, whip whites to soft peaks. Pour hot syrup in a steady stream down the side of the bowl at medium speed, then increase to full speed and whip until glossy, thick, and cooled to ~50 °C.121 °C cooks the whites to a safe temperature while the hot syrup helps sterilize and denature proteins for a stable foam. The cool‑down is essential — hot meringue will deflate the base.
  3. 3Fold the cooled base into the Italian meringue in three additions, using a large spatula and sweeping from the bottom of the bowl. Fold just until homogeneous — streaks gone but no more.Over‑folding ruptures the meringue's air cells. Three additions maintain maximum volume. The base acts as a liquid carrier, coating and stabilizing each bubble.

Starch gelatinization

Cornstarch granules swell and burst at ~95 °C, absorbing water and thickening the aqueous phase into a semi‑solid gel that provides body and shape.

Tempering

Adding hot liquid gradually to yolks prevents premature coagulation of proteins, which would produce a grainy or broken sauce.

Troubleshooting

Cream weeps or pools liquid in the pastry after 1–2 hours

Cream collapses and loses volume after setting
