Crispy Garlic
Ajo frito · Thinly sliced or minced garlic cooked slowly in oil at controlled temperature until fully dried and evenly golden-crisp throughout. The water content must fully evaporate before any browning occurs; the result is a shelf-stable, intensely aromatic, textural finishing element that adds crunch and concentrated garlic flavor to soups, stir-fries, rice dishes, noodle bowls, grilled meats, and marinades.

The formula
100 g garlic : 300–400 mL oil (3–4 : 1 by volume)
The oil volume is generous to ensure full submersion and even heat distribution. Cook in a wide, heavy saucepan or deep skillet; do not crowd the pan. Oil temperature: start at 120–130 °C for moisture evaporation, raise to 150–160 °C for final crisping. Ratio by weight of finished product is approximately 1 : 1 with raw garlic once fully crisped.

- All moisture fully driven off — no softness, chewy center, or steam when cooled
- Golden amber throughout, not pale (underdone) or dark brown/black (burnt)
- Crisps shatter under light pressure and maintains crunch for days at room temperature

Method
- 1Slice garlic 1–2 mm thick using a mandoline or food processor. Spread on a cloth and pick out any broken pieces or fine paste.Uniform thickness is the single most critical variable — uneven slices cause over- and under-cooked pieces simultaneously. Broken pieces become fine debris that burns instantly.
- 2Heat oil in a wide, heavy saucepan or cast-iron skillet over medium heat to 120–130 °C (250–265 °F). Add all garlic at once and stir gently to coat.Starting at this lower temperature drives off the garlic's inherent water content (typically 60–65% moisture) before any Maillard reactions begin. Jumping straight to high heat seals the surface, trapping steam inside and producing chewy, uneven results.
- 3Maintain 120–130 °C, stirring frequently with a spider or slotted spoon, for 8–12 minutes until all sizzling subsides and garlic slices feel dry and look pale gold.The sustained gentle heat is dehydrating the garlic. The audible sizzle indicates active moisture departure. Rushing this phase by raising heat prematurely will cause the exterior to color before the interior is dry — resulting in soft, not crisp, garlic.
- 4Raise heat to bring oil to 150–160 °C (300–320 °F). Continue stirring constantly for 2–4 minutes until garlic turns a deep, even golden amber and gives off a nutty aroma. Remove pan from heat immediately.At this range, the Maillard and caramelization reactions drive the characteristic golden color and intensified flavor. Every additional 10 seconds past golden counts — burnt garlic tastes intensely bitter and cannot be salvaged. Use a thermometer; do not rely on color observation alone.
- 5Immediately transfer garlic to a paper-lined plate or wire rack using a slotted spoon, spreading in a single layer. Let drain and cool uncovered at room temperature for at least 10 minutes.Draining immediately stops residual carryover cooking. Cooling uncovered allows steam to escape rather than condensing back into the garlic, which would make it chewy. The garlic continues to crisp slightly as it cools as remaining moisture leaves.
- 6Season with fine salt (0.5–1% by weight of raw garlic) while still warm. Store in an open container until completely cool before sealing.Hot garlic grips salt crystals and distributes seasoning more evenly. Sealing while warm traps moisture and destroys crispness within hours.
Techniques that matter
Controlled-temperature frying
Garlic contains 60–65% water and high levels of reducing sugars. It transitions from raw to fully dried to browned within a narrow 30 °C window. Precise temperature management is the difference between a crisp, shelf-stable product and a soft, chewy, perishable one.
Dehydration before coloration
All moisture must leave the garlic before browning begins. This two-phase cooking (dry-then-color) is non-negotiable for consistent results and mirrors the principle used in twice-cooked pork (回锅肉) and other double-cook methods.
Carryover control
Garlic's small mass means it continues cooking rapidly after pan removal. Removing from oil at pale gold — not waiting for target color in the pan — accounts for the 5–10 °C of residual heat that will finish the job.

Toss raw sliced garlic with 5–8% rice flour or cornstarch before frying. The starch coating creates an even crispier, lighter shell and acts as a barrier against localized hot spots, reducing burning risk significantly.
Oven-Crisped GarlicGeneral / practical
Toss sliced garlic with 1 tbsp oil per 100 g garlic, spread in a single layer on parchment, and bake at 150 °C (300 °F) for 20–30 minutes, stirring every 10 minutes. Lower temperature but longer time; produces a slightly less intensely flavored but foolproof result.
Chinese Deep-Fried GarlicCantonese cuisine, Southeast Asia
Small-dice or minced garlic fried at 160–170 °C in a wok with constant motion for 45–90 seconds until golden. Often finished with a quick drain over high heat to drive off excess oil. Standard finish for congee, fried rice, stir-fries, and dim sum.
Korean-Toasted GarlicKorea
Thinly shaved raw garlic is briefly toasted in a dry pan over medium heat, not oil-fried. Produces a different texture — more papery and less crunchy — but intensifies sweetness. Used as a garnish for namul and bibimbap.

Troubleshooting
Garlic turns dark brown or black before all pieces are crisp
Oil temperature exceeded 170 °C, or heat was raised too quickly during the coloration phase. Garlic's thin cross-section makes it highly susceptible to burning once the surface moisture is gone. → Lower heat immediately. If salvageable (still aromatic, not acrid), remove all golden pieces immediately. Burnt pieces contaminate the entire batch with bitter notes and must be discarded. Going forward, use a thermometer and remove at pale gold — not golden — before draining.
Garlic is pale, soft, and chewy after cooling
Insufficient dehydration. Either the initial low-temperature phase was cut short, or the pieces were too thick (over 2 mm), trapping moisture in the center. → Return soft pieces to oil at 120–130 °C for 2–3 additional minutes, monitoring closely. If the garlic was cut too thick, there is no remedy — future batches must be sliced thinner. A mandoline at 1 mm is safer than 2 mm.
Crispy garlic turns soft within 1–2 days despite sealed storage
Residual moisture in the container or cooling jar. Traces of oil carry moisture from the garlic surface; if sealed before all steam has escaped, the humid headspace rehydrates the crisps. → Cool completely uncovered, then store in an airtight container with a loose-fitting paper towel tucked inside to absorb any residual humidity. Do not refrigerate — cold air is humid and causes sogginess faster than room temperature.
Garlic fries but the pieces clump together into a mass
Too much garlic in the pan at once, or oil temperature too low. Crowding drops the oil temperature and allows pieces to steam each other, creating a wet surface that sticks rather than fries. → Cook in smaller batches in a wider pan or use a higher oil-to-garlic ratio. Stir more frequently. If clumped, separate pieces while still hot — they will not separate once cooled.
