Cooked grains pan-fried in fat over sustained medium-high heat until their residual moisture fully evaporates and each particle develops a golden, crunchy crust. A finishing element — scattered over soups, salads, bowls, or composed plates — that introduces textural contrast and toasted depth.

The formula

100g cooked, dry grains : 15–30ml high-smoke-point oil (≈1–2 tbsp per 1 cup grains)

15–20% oil by volume coats each grain for even heat transfer without greasing. Excess oil steams; insufficient oil scorches. Salt (½ tsp per cup grains) is added off-heat after cooking.

Method
