Crispy Shallots
bawang goreng · Thinly sliced shallots fried in hot fat until uniformly golden, crisp and lightly caramelized. The canonical finishing garnish across Southeast Asia, and a legitimate French kitchen component for adding textural contrast and sweet-savory allium richness to finished dishes.

The formula
1 part shallots : 2–3 parts oil by weight
500 g sliced shallots → ~1.2 kg oil (enough to submerge at 170 °C). Yields ~80–90 g finished crisps (~17% weight retention). Scale by desired batch: 100 g raw → ~17 g finished. Do not scale down below 50 g raw; small batches overheat oil unpredictably.

- Completely dry surface moisture before frying, verified by patting dry with cloth or 20-min air-dry on a single layer
- Oil temperature at 160–170 °C (320–340 °F) sustained throughout frying

- Fry until uniformly golden, not deep amber, with no pale patches or dark specks
- Drain immediately on a single paper-lined layer; do not stack warm shallots

Method
- 1Slice shallots as thinly and uniformly as possible, 1.5–2 mm crosswise.Uniform thickness is the single critical variable; it determines whether all slices reach golden simultaneously or whether some burn while others pale.
- 2Rinse sliced shallots briefly in cold water to remove surface starch, then drain.Starch promotes clumping in hot oil and accelerates darkening via caramelization beyond the Maillard window, giving bitter, irregular coloring.
- 3Spread sliced shallots on a clean kitchen towel and dry completely, patting and allowing 15–30 minutes air-drying. Alternatively, spin dry in a salad spinner.Any residual surface moisture causes violent bubbling, temperature drop, and steam-infused frying that produces soggy, chewy rather than crispy results.
- 4Heat oil to 165–170 °C in a wide, heavy-bottomed saucepan or deep saucepan. Test with a thermometer or by dropping one slice in: it should sink, then immediately surface surrounded by small steady bubbles (not explosive).160 °C is the minimum for proper Maillard-driven browning without greasiness. Above 180 °C, shallots skip golden and go directly to amber or burnt.
- 5Add all dried shallots at once if batch is ≤200 g; for larger batches, add in two portions. Stir gently with a spider or slotted spoon for the first 90 seconds to separate clumping slices.Initial stirring prevents slices from welding together into a mat. Once the surface moisture evaporates (~90 seconds), the shallots become structurally stable and stirring is no longer needed.
- 6Fry undisturbed at 160–170 °C, watching color progress. Total fry time is typically 4–7 minutes from addition. Remove when uniformly golden, with no pale centers or dark spots, and immediately drain in a single layer on paper towels.Carry-over browning continues 10–15 seconds after removal; remove from oil while still a shade lighter than target. Over-extended time yields dark, bitter, soapy-tasting crisps from excessive lipid oxidation.
Techniques that matter
Temperature-controlled deep frying
Shallots contain little water but significant sugar; controlling oil temperature governs Maillard reaction rate and prevents pyrolysis of natural sugars before proteins are available for browning.
Starch removal by rinsing
Surface starch is the primary cause of clumping and irregular browning. Rinsing and drying is not optional—it is structurally essential to the technique.
Carry-over browning management
Shallots continue cooking in residual heat after removal; erring slightly light in the oil prevents the bitter, acrid notes of over-browning.

Bawang goreng (Indonesian/Malaysian)Indonesia, Malaysia
Shallots sliced 2 mm, fried in coconut oil at 160 °C, seasoned with fine salt and sometimes a pinch of sugar. Served as primary condiment with nasi goreng, satay, gado-gado, and lontong. More fragile texture than French style; often stored with a salt layer to maintain crunch.
Hành phi (Vietnamese)Vietnam
Same technique but fried until deeply golden, sometimes with the addition of a small amount of hot rendered pork fat (mỡ hành) for aromatic depth. Used in phở, bánh cuốn, and bún bộ. Often made with a combination of shallots and garlic in a 4:1 ratio.
Oignons frits (French)France
Standard French kitchen garnish: 2 mm shallot slices, fried in clarified butter or a blend of butter and neutral oil at 165 °C. Used as finishing garnish for blanquette de veau, vol-au-vent, steak au poivre, and grilled entrecôte. Seasoned with fleur de sel post-frying.
Shallot vermicelli / threadsJapan, Korea
Very thin julienne (1 mm or less) fried at slightly lower temperature (150–155 °C) for longer time to achieve hair-fine, lace-like golden threads used as garnish for ramen, kaiseki, and rice bowls.

Troubleshooting
Shallots emerge soft and chewy rather than crisp
Insufficient drying before frying; residual surface moisture causes steam cooking instead of frying. Oil temperature too low (below 150 °C) forces the slices to stew in fat. → Verify shallots are bone-dry before frying. Use a thermometer: oil must reach 160–170 °C before first slice is added. If slices have already softened, transfer to a baking sheet and finish at 180 °C in a dry oven for 3–5 minutes to drive off remaining moisture.
Shallots are dark brown or blackened with bitter taste
Oil temperature exceeded 185 °C, or shallots were left in oil past target color. Shallots have very low moisture and brown rapidly once Maillard reaction peaks. → Remove from oil while shallots are a light golden shade; carry-over heat will finish them. Use a thermometer and never exceed 175 °C. If burned batches occur, discard; burned allium compounds (acrylamides and lipid oxidation products) are bitter and potentially harmful.
Shallots clump together into a solid mat during frying
Insufficient rinsing to remove starch, or insufficient stirring in the first 90 seconds of frying. Slices fuse while surface moisture is still present. → Rinse sliced shallots in 2–3 changes of cold water before drying. Stir actively during initial frying phase. If clumping occurs, immediately separate slices with tongs while still in oil before structural set. If set, break apart after draining while still warm.
Shallots lose crispness within hours of frying
Moisture from storage environment (not internal moisture) absorbed by crisps. Common in humid climates. Containers not fully sealed. → Store in an airtight container with a small silica gel packet if available. Do not refrigerate—cold air condenses moisture on contact. If slightly softened, re-crisp in a single layer at 160 °C oven for 3–5 minutes. For long-term storage in humid environments, toast briefly in a dry pan before sealing.
