Croissant dough

Détrempe et beurrage · A yeast-leavened laminated dough built by enclosing a cold beurrage block within a fermented détrempe, then executing repeated letter folds to create alternating butter-dough layers. Upon baking, the steam from evaporating water within the butter layers lifts the dough into the characteristic honeycomb crumb and shattering crust of a croissant.

The formula

1000 flour : 700 butter : 560 liquid by weight

1000g strong bread flour (14–15% protein), 560g full-fat liquid (whole milk or 80% milk + 20% egg by weight), 40g butter for détrempe, 660g European-style 84% fat butter for beurrage, 60g caster sugar, 20g fine salt, 30g fresh yeast (or 10g instant). Yields ~12 large croissants or 18 standard. All ingredients cold (4–6 °C); beurrage is a 20×30 cm block at 13–15 °C.

Method

  1. 1Combine flour, sugar, salt, and yeast. Add cold milk and 40 g melted or softened butter. Mix to a smooth, non-sticky détrempe (2–3 min by hand, 1 min in stand mixer with dough hook).Even gluten development begins here. Cold liquid slows fermentation so dough is manageable for lamination.
  2. 2Wrap détrempe tightly in cling film. Refrigerate 30–60 min until 4–6 °C core temperature. Meanwhile, beat remaining 660 g cold butter between parchment into a 20×30 cm uniform block at 13–15 °C (pliable, not greasy).Chilling the détrempe keeps butter cold during lamination.   3. 3On a lightly floured surface, roll détrempe into a 40×35 cm rectangle. Place butter block in centre. Fold dough over butter completely, pinching seams tightly. Perform first tour simple (single fold): roll to 50×20 cm, fold right third over centre, then left third over centre. Fold in half like a book. Mark with knuckle indent.Enclosing the butter creates the first dough-butter-dough unit. Pinched seams prevent butter leakage. The knuckle mark tracks fold count during refrigeration.
  4. 4Wrap in cling film. Refrigerate 30 min minimum (up to 2 h).   5. 5After final rest, roll dough to 4 mm thick. Cut into long triangles (base 9–10 cm, height 25–30 cm). Stretch slightly, then roll firmly from base to apex to shape. Overnight refrigeration between fold series allows protease enzymes to partially break gluten strands, reducing spring and making the dough pliable for thin, even rolling.

Croissants are ready to bake when core temperature reaches 19–20 °C, regardless of clock time; temperature drives fermentation rate.

Troubleshooting

Butter tears through dough during rolling

Butter is too cold (below 10 °C) and shatters rather than bending; or dough is too cold and inelastic, cracking under tensionAllow beurrage to warm to 13–15 °C on the bench briefly. If dough is too cold, let rest 5–10 min at room temperature before continuing. Never force-roll cold, stiff dough.

Butter leaks out during baking (pools of fat on tray)

Butter was too warm during lamination (above 18 °C) and was absorbed into dough rather than staying as a discrete layer; or seams were not sealed before rollingMaintain dough and butter at 4–6 °C during rest periods.
