Provenance
The crescent shape descends from the Austrian Kipferl, documented since at least the 13th century, though the Kipferl was not laminated. The laminated yeasted version was introduced to Paris via Viennese-style bakeries (boulangeries viennoises) in the 1830s–1840s, most credibly through Austrian August Zang's bakery established around 1838. French bakers subsequently refined and codified the lamination technique into the modern croissant, making it culturally and technically French in its definitive form.
