Danish dough

Dej til wienerbrød · A yeasted laminated dough in which a butter block is enclosed in an enriched yeast dough and repeatedly folded and rolled to produce alternating strata of dough and fat. The yeast provides fermentation flavor and lift; the lamination produces the characteristic flaky, honeycomb crumb. It is the structural foundation for croissants, Danish pastries, and all laminated yeasted Viennoiseries.

The formula

1000 flour : 600 liquid : 500 butter : 80 yeast : 80 sugar : 20 salt (by wt)

Scale by weight. Liquid = 60–65% of flour weight. Lamination butter = 50% of flour weight; optional enrichment butter = 5–8% of flour weight. Single batch (500 g flour): ~1.8 kg dough → 8–10 croissants or 12–16 Danish. Dough temp 18–20 °C; lamination butter 14–16 °C. Three letter-folds (6 layers each, 18 total) or two book-folds (9 total) are standard.

Method

  1. 1Combine flour, sugar, salt, and yeast. Mix with cold milk to a shaggy mass, then knead 5–7 min on medium speed until a smooth, slightly tacky dough forms (24–26 °C / 76–78 °F).Kneading develops gluten to a coherent, extensible network capable of holding butter layers without tearing. Cold liquid controls fermentation before lamination begins.
  2. 2Wrap the dough in plastic and refrigerate 30–60 min until firm and cold (4–6 °C core).Cold dough is pliable and elastic enough to roll without springing back, yet firm enough to encase and seal the butter block.
  3. 3Pound lamination butter into a 15 × 15 cm square between parchment until pliable but cool (14–16 °C). Roll dough into a rectangle, place butter in the center, and fold dough over to enclose completely. Seal all edges tightly.Butter and dough must share the same consistency — neither rock-hard nor soft — to roll as a unified packet without the butter breaking through the dough layers.
  4. 4Roll the packet into a long rectangle. Perform the first fold: letter-fold (trifold) or book-fold. Wrap and refrigerate 30 min. Repeat for a total of 3 folds, resting 30 min between each.Each fold doubles or triples the number of layers. Resting relaxes gluten tension and re-firms the butter, preventing tearing on subsequent rolls and giving defined, non-meringue-like layers.
  5. 5After the final fold, refrigerate the dough overnight (12–18 h) or freeze portioned pieces. For croissants: roll to 4–5 mm thickness, cut triangles, shape, and proof at 24–27 °C (75–80 °F) and 75–80% RH until doubled, about 2–2.5 h. Bake at 190–200 °C (375–390 °F) with steam for the first 8 min.Overnight rest deepens flavor, improves dough extensibility, and allows fermentation to build structured gas cells. Proofing develops the oven spring that separates the delicate inner layers.

Lamination

Enclosing a butter block within dough and folding it repeatedly creates alternating fat-dough strata that produce the characteristic flaky, layered texture upon baking.

Fermentation

Yeast activity generates CO₂ that inflates the dough and creates the open honeycomb crumb. Fermentation flavor (alcohol, organic acids) distinguishes Danish from neutral puff pastry.

Gluten development

A moderately developed gluten network is essential: strong enough to trap gas and hold layers during proofing, yet extensible enough to stretch around butter without tearing.

Temperature management

Both dough and butter must remain cold but plastic (workable) throughout lamination. Warm butter absorbs into dough, destroying the lamination layers; warm dough becomes sticky and over-ferments.

Puff pastry (feuilletage inversé)France

Unyeasted laminated dough with a higher butter ratio (often 1:1 flour to butter by weight) and more folds (6–7). No fermentation; flakier, more neutral flavor.

SchlaggermürbrotGermany/Austria

A shorter, richer laminated dough with higher fat content in the base dough and fewer folds, producing a more biscuit-like crumb.

Pain au chocolatFrance

Troubleshooting

Butter leaking during baking (butter pools on tray)

Butter was too warm during lamination and was absorbed into dough before resting; too few folds; butter layers not sealed at edgesEnsure lamination butter is 14–16 °C (pliable but not greasy). Perform at least 3 folds with tight sealing. Rest dough 30 min between folds in the refrigerator. If leaking persists, reduce lamination butter by 10–15%.

Dense, brick-like crumb with no flake

Storage

Keeps 48 h refrigerated (wrapped airtight). Frozen: 2–3 weeks.Wrap tightly in plastic wrap, then in a zip bag pressing out air. Label frozen portions with date and weight. Thaw overnight in refrigerator before shaping. Reheat: Bring refrigerated dough to 4–10 °C before rolling. Do not reheat dough. Baked products: reheat at 175 °C (350 °F) for 5–8 min to restore crispness.
