This is not a blonde roux hurried along for speed—it is a deliberate, long-cooked roux that sacrifices up to half its thickening power to achieve the toasted-nutty depth and reddish-brown hue that define authentic Cajun and Creole cooking. The result is a flavour base and thickener that carries the essence of Louisiana cooking.

The formula

1 : 1 by weight (250 g flour : 250 g fat per standard batch; 1 cup/125 g flour requires 125 g fat)

Volume-equivalent: 1 cup all-purpose flour (125 g) needs 125 g fat (~140 mL for most fats). The ratio never changes; what changes is cook time and colour target—white (3–5 min), blonde (8–12 min), brown (15–20 min), dark/mahogany (25–35 min), chocolate (35–45+ min). Cajun gumbo roux must reach at minimum the mahogany-to-chocolate zone.

Ingredients

Method

  1. 1Measure flour and fat to exact equal weight.   4. 4At the target colour, immediately add the holy trinity and garlic to the hot roux. Stir vigorously for 60–90 seconds until fragrant and slightly softened—this stops the cooking and prevents the roux from over-browning.The vegetables provide a thermal buffer that arrests the roux's colour progression. They also begin flavour infusion before any liquid is introduced.
  5. 5Add cold liquid in a thin stream while stirring rapidly, or add cold liquid all at once and whisk or stir vigorously to incorporate. Deglaze the pan completely, scraping up every bit of fond.Cold liquid shocks the roux, preventing further colour change. The physical shock also helps the roux hydrate evenly without forming lumps.
  6. 6Bring the mixture to a boil over high heat while stirring, then reduce to a gentle simmer. Simmer uncovered for at least 20 minutes, skimming any foam, until the raw flour taste is gone and the roux is fully integrated.Boiling activates the thickener fully (gelatinisation completes above 95 °C). Techniques that matter

Continuous stirring

The roux is a dry-heat cooking process at the flour's surface. Uneven stirring creates uneven colour and burns. This is the defining skill of roux-making and cannot be automated or delegated.

Colour as doneness indicator

Unlike most preparations, doneness is judged by colour not time or temperature. A cook must learn to read the progression from white to blonde to brown to mahogany to chocolate through experience.

Thermal arrest via aromatics

Adding cold aromatics immediately after reaching target colour stops the Maillard/drying reaction before the roux can burn. This is a critical safety and quality step.

Cold-liquid inversion

The roux is hotter than the safe starch-gelatinisation temperature; adding cold liquid rapidly lowers the temperature while the mechanical action of stirring distributes the roux evenly.

Intermediate stage, brick-red in colour. Achieved at roughly 20–25 minutes. A compromise between flavour depth and thickening power. Common in some Acadiana households.

Corn roux (roux de maïs)Rural South Louisiana

Made with cornmeal instead of wheat flour. Lower thickening power but distinct corn flavour. More common historically; still used in some traditional preparations. Not interchangeable with wheat roux.

Instant dry roux powderCommercial and convenience cooking, Louisiana

Pre-cooked, dehydrated roux reconstituted with water or stock. Convenient but lacks the toasted-nut depth and Maillard complexity of a freshly made roux. Boudreaux's and other brands are widely available.

Troubleshooting

Roux burned—black specks appear at the bottom or a bitter, acrid smell develops

Stirring stopped for even a brief period, heat was too high, or the batch was left unattended. Burnt roux cannot be saved—every gram of the batch is contaminated by the carbonised material.Discard the entire batch immediately. A burnt roux imparts bitterness that cannot be diluted or masked. Start fresh with a clean, cool pot.

Roux turned grey or took on an ashen, dull colour rather than chocolate brown

Too-low heat or excessive pressure while stirring scraped off flour rather than colouring it. The roux dried out without developing proper Maillard reaction.Increase heat to a steady medium. Ensure the spoon stays in contact with the roux but does not gouge it. A grey roux can sometimes be rescued by continuing to cook with more heat, watching carefully for colour development.

Lumpy roux when liquid is added

Liquid was too hot, added too quickly, or added to a roux that had cooled below gelatinisation temperature. The cold roux solidified and the outside of clumps gelatinised before mixing could occur.In a separate pot, make a slurry of roux with a small amount of room-temperature liquid, whisking vigorously to a smooth paste. Add this slurry back to the main pot of simmering liquid, stirring constantly.

Roux separates or 'breaks' in the finished sauce or gumbo

Excess oil floating on the surface after long standing. Occurs when too much fat was used relative to flour, or when the gumbo was not brought to a full simmer after the final liquid addition. Also caused by high-acid ingredients (tomatoes, lemon juice) added in excessive quantity.Bring the dish to a boil while whisking or stirring vigorously. A broken roux can often be rescued by blending a small amount of the liquid with roux into a smooth paste, then whisking that back into the pot. Simmering strongly for 5–10 minutes often re-emulsifies the roux.
