curtido
curtido · A traditional Salvadoran lacto-fermented condiment of shredded cabbage, carrot, onion and oregano, produced by dry-salting vegetables and allowing spontaneous Lactobacillus growth. It is the canonical acidic, fermented counterpart to pupusas and other thick maize preparations, providing textural contrast, lactic brightness and gut-flora activity that neither vinegar pickles nor fresh slaws can replicate. Curtido is a living condiment: its character evolves over days and weeks as fermentation progresses.

The formula

The master ratio is the 1.5–2% salt-to-vegetable-weight rule governing all lacto-fermented vegetables. From this base, cabbage must dominate (≥70% of vegetable mass). Carrot adds fermentable sugar for LAB activity and colour; onion supplies aromatics and additional substrate; oregano provides the characteristic Salvadoran signature. Jalapeño or chiltepe pepper may be added (up to 5% of vegetable weight) without disturbing the ratio.
Identity
- Must be lacto-fermented, not vinegar-pickled — no added acid; sourness comes from bacterial metabolism
- Cabbage must dominate — at minimum 70% of the vegetable mass by weight
- Dry-salting draws out vegetable liquid to create the brine; no added water is required or desirable
- Oregano is the non-negotiable aromatic — it distinguishes Salvadoran curtido from Korean kimchi, German sauerkraut or Asian pickled cabbage

- No starter culture is used; fermentation is spontaneous, relying on resident Lactobacillus on the vegetable surfaces

Method
- 1Toss shredded cabbage, carrot, onion and oregano with the salt in a large bowl. Work the salt into the vegetables firmly with clean hands for 2–3 minutes until liquid begins to pool at the bottom of the bowl.Dry-salting physically disrupts cell walls, osmotically drawing out intracellular liquid to create the anaerobic brine. The mechanical action accelerates this extraction dramatically versus simply letting it sit.
- 2Pack the salted vegetable mixture tightly into a clean 500 mL jar (or two smaller jars), pressing down firmly with a fist or a tamper to eliminate air pockets. The extracted brine must rise to cover all solids by at least 1 cm.Lactobacillus is anaerobic; any vegetable matter exposed to air will spoil rather than ferment. Packing eliminates oxygen pockets and ensures complete submersion.
- 3Place a weight on top (a small zip-lock bag filled with brine, or a cabbage leaf folded to fit) to keep vegetables submerged. Cover the jar loosely with a cloth or a lid set just above closed to allow CO₂ to escape but prevent dust entry.During fermentation, CO₂ pressure will build; a loose cover vents it while maintaining a barrier against wild yeasts and contaminants.
- 4Ferment at room temperature (18–22 °C) for 2 to 4 days. Taste daily from day 2 onward. The curtido is ready when it smells pleasantly sour, the cabbage has softened to a slight bend without losing crunch, and the brine is mildly cloudy with small bubbles.Lactobacillus activity peaks between 18–22 °C; below 15 °C the fermentation stalls, above 26 °C off-flavour organisms proliferate. Two to four days produces the characteristic Salvadoran level of sourness without over-fermentation.
- 5Once the desired sourness is reached, press the curtido firmly to pack it, seal the jar, and refrigerate immediately. The cold arrests bacterial activity, preserving the flavour and texture for 4–6 weeks.Refrigeration slows Lactobacillus to near-dormancy while preserving the texture and flavour. Without cold storage, fermentation continues and the cabbage will become progressively softer and more acidic.
Techniques that matter
Dry-salting (osmosis-driven brine extraction)
Unlike vinegar pickling, lacto-fermentation relies on salt drawing out vegetable liquid to create an anaerobic brine. No added water is used. The technique is identical to traditional sauerkraut and Korean baechu-kimchi.
Anaerobic packing
Excluding oxygen is the single most critical safety condition in lacto-fermentation. Lactobacillus thrives without oxygen; pathogens require it. Tight packing and submersion are non-negotiable.
Spontaneous fermentation
No starter culture is added. The Lactobacillus strains are already present on the cabbage surface. A clean vessel and proper salt concentration are sufficient; the correct environment selects for the desired bacteria.
Variations & derivatives
Curtido con chileEl Salvador (rural households)
Includes thin slices of jalapeño or chiltepe pepper for heat. The chiltepe is the most authentically Salvadoran choice, offering a fruity, capsaicin-forward bite without overwhelming the cabbage.
Curtido de repollo con remolachaHonduran / Nicaraguan adaptations
Beet is added for vivid colour and earthy sweetness. A legitimate regional variation, though not traditional Salvadoran curtido.
Curtido de zanahoriaGuatemala
Uses more carrot relative to cabbage; essentially a carrot-forward ferment with cabbage as secondary. Often includes green bell pepper.

Substitutions
- Sea salt → Kosher salt — Use the same weight. Table salt with anti-caking agents may inhibit fermentation slightly. Iodised salt will significantly inhibit Lactobacillus and must not be used.changes result
- Mexican oregano → Mediterranean oregano — Mexican oregano (Lippia graveolens) has a citrusy, slightly bitter note absent in Mediterranean oregano (Origanum vulgare). The swap is acceptable but will produce a perceptibly different flavour profile.
- Green cabbage → Napa cabbage — Napa has higher water content and a more delicate leaf structure. It ferments faster and can become mushy. Use as a 1:1 weight substitute but reduce fermentation time to 1–2 days.
- Jalapeño → Serrano pepper — Serrano is hotter (2–3×) and slightly more acidic. Use half the volume. Not traditional but acceptable.
Troubleshooting
Surface layer of white foam or slime forms on the brine
Excess oxygen exposure — likely from insufficient packing or a loose cover — allows wild yeasts and aerobic bacteria to colonise the surface → Skim off the foam, taste the underlying curtido; if the flavour is still pleasantly sour and clean, the batch is salvageable. Press vegetables lower into the brine and ensure submersion. If the slime persists or smells unpleasant, discard.
Excessively sour, soft and mushy within 2 days
Room temperature too high (>26 °C) or fermentation allowed to proceed unchecked for too long after the desired sourness was reached → Refrigerate immediately to arrest further activity. Use over-ripe curtido in soups or cooked applications where texture matters less. For future batches, ferment in a cooler location (16–18 °C) and taste twice daily.
No brine has formed after 4 hours of salting
Cabbage was pre-rinsed or washed, removing surface moisture; salt was insufficient; vegetables were not packed tightly enough → Add 2–3% additional salt dissolved in a small amount of filtered water (dissolved first to ensure even distribution). Alternatively, squeeze the vegetables firmly by hand to mechanically extract liquid.
Strong ammonia or unpleasant rotting smell
Fermentation contaminated by unwanted bacteria, almost always due to insufficient salt or warm temperatures allowing proteolytic bacteria to dominate → Discard entirely. Do not taste. This is distinct from normal lactic sourness. Restart with correctly salted vegetables only if only a small portion of the surface is affected and the bulk smells clean.
